People are always asking me about low carb desserts. One of my best solutions for that want and need was to create this keto mug cake recipe. It uses simple ingredients, tastes like a delicious cake, and is conveniently portioned in a mug size. 

Minimal cooking time is also a perk! Easy recipes like this prove that anyone can enjoy a sweet treat without feeling like they’re going overboard. And the best part is that you can make this low carb mug cake easily right at home.

Gather the ingredinets from the grocery store and keep them on hand for when that craving strikes. (which for me is all the time!)

Ingredients

  • Coconut oil – This makes the keto recipe moist and delicious. You can use melted butter if you prefer.
  • Vanilla extract – Adds flavor. 
  • Sour cream – Helps to add more moisture. 
  • Egg – Used to bind all the ingredients together. 
  • Joy Filled Eats Sweetener – This is my go-to sweetener.
  • Almond flour – The main ingredient to make this almond flour mug cake recipe. 
  • Coconut flour – Adds texture and a bit of sweetness. 
  • Baking powder – Adding this helps the entire cake be light and fluffy. 
  • Salt – Just a little bit if needed. 
  • Chocolate chips – This gives the keto mug cake recipe a yummy chocolate flavor.

How to Make Keto Chocolate Chip Mug Cake

You’ll love how easy and simple this recipe is! There’s no reason no to give it a try.

Step One: Add all the the wet ingredients and dry ingredients into a microwave-safe mug.

Step Two: After that, stir well. You want the ingredients to be thoroughly incorporated.

Step Four: Finally, heat the coffee mug cake for 1.5 minutes. 

Top Tip💡

You can turn this into a keto chocolate mug cake recipe by replacing a tablespoon of the almond flour with cocoa powder. Try that the next time that you make this treat. 

Substitutions

  • Dark chocolate – Change the type of chocolate chips that are used. Chocolate chip mug cakes can use semi-sweet, dark, or even white chocolate to get that rich chocolate flavor. 
  • Greek yogurt – Don’t have sour cream? No problem. Natural Greek yogurt works great, too.

Variations

  • Add maple syrup – Putting a little bit of maple syrup into this delicious cake recipe is a great way to bump up the sweetness factor. 
  • Add peanut butter – The addition of peanut butter will turn this chocolate chip cookie mug cake into a keto peanut butter mug cake. 
  • Add toppings – You can melt and drizzle low-carb chocolate chips on top of the dessert or even add a bit of fresh berries.

How do I reheat leftover mug cake? 

If you don’t consume the mug cake in one sitting, you can save the leftovers in an airtight container and keep them in the fridge. When you are ready to eat again, reheat the mug cake in the microwave for about 10-20 seconds. Reheat until it is warm. 

If after reheating it you notice that it’s a little bit dry, add a tad bit of keto vanilla ice cream on top to sweeten the deal. 

Can I freeze a mug cake? 

You can! Once you microwave the mug cake ingredients, simple remove the cooked mug cake, and add it to a freezer-safe container. Keep it stored in the freezer for up to 2 months. 

When you are ready to eat it, pop it in the microwave and reheat until it is warm.

Notes

Nutrition: This makes 1 serving. The entire mug cake has 7 NET carbs.
Coconut Oil: If your coconut oil is solid simply melt it in the mug in the microwave for 15 seconds and then add the rest of the ingredients.
Microwave Cooking Times: The power of microwaves can vary. These times are based on an 1100 watt microwave. Decrease or increase as needed for your microwave.
To Reheat: you can reheat the mug cake in the microwave for 10-20 seconds. 
To Freeze: take the mug cake out of the coffee cup and store in a freezer-safe container that’s airtight. Freeze for up to 2 months. Reheat in the microwave. 
Notes on Sweeteners: 
I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.
To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for. 
 
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
 
Substitutions will work in most recipes. They may not work in candies, such as caramel.
