Ingredients
Peanut Flour - I chose to use peanut flour for a more intense peanut flavor than using almond flour and peanut butter. But if you want you can try swapping in a combination of almond flour and creamy or chunky peanut butter in place of the peanut powder.
Coconut Flour -Coconut flour works well in this recipe in conjunction with the peanut butter powder.
Sweetener - I use a blend of granular sweeteners with stevia but I offer alternatives in the recipe card.
Salted Butter - The bit of added salt enhances the other flavors in this mug cake recipe. If you have unsalted butter just add a pinch of salt.
Baking Powder - Make sure your baking powder is fresh so the cake rises properly.
Egg Yolk - An entire large egg would make this cake much too eggy. Using just one egg yolk is perfect. Save the egg white for another use.
Sour Cream - Sour cream makes the cake moist. Greek yogurt is a good sub, if needed.

First Step: Using a large mug, combine the butter, sweetener, peanut flour, coconut flour, egg yolk, sour cream, baking powder, vanilla, and a tiny pinch of salt. Once it’s mixed well, put it in the microwave for 1 minute.

Peanut Butter - After your cake has cooked in the microwave, drizzle a little bit of sugar-free natural peanut butter on top. It adds to the already amazing peanut butter flavor and looks lovely too.
Chocolate Chips - Love the peanut butter chocolate combo? Adding some sugar-free chocolate makes everything a little better right? Sprinkle in 1 tablespoon of sugar free chocolate chips before cooking the keto peanut butter mug cake or set a few on top after. Either way, some warm chocolate chips are divine.
Melted Chocolate - Just like adding chocolate chips, I will sometimes drizzle some melted sugar-free chocolate on top. It’s lovely when you do the chocolate and peanut butter. You don’t need a lot, but it sure tastes great and makes them look even prettier.

In order to convert a regular mug cake recipe that uses flour and sugar to a low carb recipe you will have to sub out those ingredients. You can try almond flour in place of wheat flour and your favorite sugar substitute sweetener in place of the sugar. Just making those two swaps greatly reduces the net carbs. If the recipe also calls for butter, sour cream, plain yogurt, eggs, cocoa powder, vanilla, and/or cream cheese those are all gluten free and keto friendly.
Can I add frosting?
Of course! This has a mild peanut butter flavor on its own so to really kick that up a notch try some Peanut Butter Frosting. Other great choices are Keto Cream Cheese Frosting, Buttercream Icing, or Keto Chocolate Frosting.
Can I save leftovers?
Yes, if you only craved a taste and didn’t need the entire keto peanut butter mug cake, you can save it for later. Wrap it up, so it’s airtight and place the mug cake in the refrigerator. Then when you are ready to eat it, you can either warm it up or enjoy it cold. I think it tastes best cold or just warmed, so I just put it in the microwave for 10-20 seconds. It heats up fast, so don’t let it warm up for too long.

Question your recipes that use coconut flour and almond flour …can I just use THM baking blend?

Yes, in most recipes you can sub in baking blend. I recommend using a bit less. If I call for 1 cup total of the other flours I'd sub in 1 cup minus 1 tablespoon of baking blend.
