Starbucks Skinny Vanilla Latte & Frappuccino Recipe

A few weeks ago I splurged at Starbucks and got a Breve Frappuccino with Sugar-Free Vanilla syrup. I don’t normally get the sugar free syrups since they use Splenda and I prefer natural sweeteners. But it was SO good. I’ve been wanting another one since then. I began playing around with making a healthy vanilla latte concentrate.
This frappuccino recipe is low carb, keto, and really does rival my sugar-free Starbucks treat. Keep reading for my homemade iced skinny vanilla latte and frappuccino recipe.

How to Make a Frappuccino Base
I make one base with heavy cream, almond milk, sweetener, coffee, and vanilla. Once that it made you can tweak it to a latte or frappuccino by the amount of additional almond milk and ice you add.
Can I make this dairy-free?
I haven’t tried making this entirely dairy-free but I’m sure a combination of coconut milk and almond milk will work.

Can I make this concentrate with other flavors?
Yup! You can tweak this copycat Starbucks skinny vanilla latte to be different flavors by omitting the vanilla in favor of another extract.
Spices – Feel free to add some cinnamon, nutmeg, pumpkin pie spice, or another spice of your choice.
Chocolate – Blend it with some cocoa powder for a mocha.
Spicy – You can even kick it up with a tiny bit of chipotle powder.

How do I make coffee ice cubes?
To make coffee ice cubes you simply freeze brewed coffee in an ice cube tray. This way when you blend or chill your coffee drink it won’t get watered down with regular ice cubes made from H2O.

Iced Latte vs Frappuccino
So, I do use the one keto Starbucks latte concentrate for both of these. The main difference is what you add to it and how it is prepared.
Here are two examples:
Skinny Vanilla Latte:
1 part concentrate
1 to 1.5 parts almond milk, to taste
coffee ice cubes (highly recommended – just freeze coffee in an ice cube tray)
Example: 6 oz concentrate plus 8 oz of almond milk over a few frozen coffee ice cubes
Keto Frappuccino:
1 part concentrate
1/2 part almond milk
coffee ice cubes and regular ice cubes
pinch of xanthan gum, optional (it helps keep the drink from separating)
Example: 8 oz concentrate plus 4 oz almond milk blended with 6 coffee ice cubes, 6 regular ice cubes, and a pinch of xanthan gum

Starbucks Skinny Vanilla Latte & Frappuccino Recipe
Ingredients
Concentrate:
- 1.5 cups almond milk
- 1/2 cup heavy cream
- 1 cup very very strong coffee (I used twice the amount of grounds I normally use)
- 1/2 cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
- 1 tsp vanilla
Instructions
To Make the Concentrate:
- Combine concentrate ingredients and mix thoroughly.
To Make an Iced Latte:
- 1 part concentrate, 1 to 1.5 parts almond milk, to taste, coffee ice cubes (highly recommended – just freeze coffee in an ice cube tray)

Could I just substitute store-bought cold brew coffee for 1 cup of very strong brewed coffee?
That should be fine as long as it is strong.
I see this says 6 servings is the recipe shown for 6 people? And is the recipe shown 79 calories or is the recipe decided into 6 79 calories?
The recipe shown is for a concentrate. It can make up to 6 beverages when you use the concentrate in the other recipes. The 79 calories is for one portion of the concentrate.
What is considered a serving, a cup or 1/2 cup?
The nutrition facts are for 4 oz of the concentrate.
Can you refrigerate the concentrate if you make extra and if so for how long. Thank you
It should last until the expiration date on your cream. So, if using fresh cream 2-3 weeks.

Yes, I’d use the carton coconut milk.

Haven’t tried yet, but it looks yummy. What if you used other flavorings? Peppermint? My daughters favorite is Pumpkin, how would you alter this to make it pumpkin flavored? Thanks in advance
Yes, you can definitely use other flavors. I think pumpkin flavored coffee tastes less like pumpkin and more like the spices you use in pumpkin pie. I’d try a combo of nutmeg, cinnamon, and vanilla.

I normally just use granular. It does dissolve when well mixed. If you prefer powdered that’s fine too.
What do you mean by “1 part concentrate”? How much is 1 part?
That depends on if you want a grande or a venti 😉 I give examples in the recipe box. For a latte, you basically want the same amount of concentrate and almond milk. 8 oz of each (or more or less). For a frappuccino, you use more of the concentrate since you are blending ice into it.
This is wonderful. Can you explain how many carbs are counted for this drink if I do 1 1/2 cup almond milk and 1/2 cup mixture?
The base mix has 1 carb for 1/2 cup and the almond milk should also have 1 carb for 1.5 cups. Just check your almond milk to be sure.
So we do not count the carbs in the sweeteners if they are on plan? Sorry, just making sure I understand.
Yes, the carbs in these sweeteners are sugar alcohols which the body does not absorb.
