This was one of the first recipes I ever blogged back in 2016. I originally created this for my Magic Cookie Bars in December 2015 and it has become a staple in my kitchen. I think my food photography skills have improved enough in the last 5-6 years that I wanted to redo this post.
Why am I so excited about keto condensed milk, you ask? Because regular sweetened condensed milk has 22 grams of sugar in just 2 tablespoons for leading brands!
We do have a sweet tooth, so it makes sense that I was on a mission to create my own. Once you try this low carb sugar free keto recipe for condensed milk, you are going to be glad to say goodbye to the canned stuff.
It is so nice to have a sugar free alternative to the canned varieties. I can make my favorite recipes without added sugars.

Ingredients
The good news it that this is easy to make with simple ingredients. All you need for low carb sweetened condensed milk is 4 ingredients and it tastes better than the real thing.
- Heavy Cream – Using heavy whipping cream will help the keto condensed milk be the right texture. You may not realize it, but heavy cream is also a great source of vitamin A, vitamin D, and good fats.
- Butter – A little bit of salted butter is the perfect addition to this sugar free sweetened condensed milk. If you have unsalted butter just add a pinch of salt
- Low Carb Sweetener – I use a blend of xylitol, erythritol, and stevia (my own Joy Filled Eats Sweetener) in my recipes. Be sure to check out my alternatives listed in the notes section for other sweeteners such as monk fruit.
- Egg Yolk, optional – You only need the yolk, not the entire egg. Save the white for another recipe or eat it in your scrambled eggs. I do prefer adding the egg yolk to my condensed milk. It thickens it and makes it creamier than the times I’ve made it without egg.
This recipe makes about 2/3 cup of sugar-free sweetened condensed milk. You can double or triple it if you need more for one of your keto dessert recipes.

How To Make Keto Condensed Milk
Step One: Mix together the heavy cream, butter, and sweetener in a saucepan. Bring to a gentle boil over medium heat and stir frequently until it’s a light golden brown color.

When it’s thick enough to coat a spoon it’s ready.

Step Two: Remove the pan from the heat and cool to room temperature. Gently add in the egg yolk and stir. Or if you are in a hurry, pour the mixture over the top of the egg yolk and stir fast! Stirring quickly is important to prevent the egg from scrambling.
Let cool to room temperature. Transfer the keto sweetened condensed milk to an airtight container such as a glass jar.

Top Tip💡
The important thing when cooking this down is to cook it long enough to coat the back of a spoon. You should be able to run your finger down the back of the spoon and see a line.
Variations
- Dairy Free – I made a dairy free version of this using coconut milk for my Keto Coconut Cream Pie. Head over there to find the dairy-free version!
- Flavors – Try adding some vanilla extract, almond extract, or a sweet spice like cinnamon. These are all find to add for a keto diet.
- Caramel – This is very similar to a caramel. To make a homemade keto dulce de leche just cook it longer over low heat until it is very thick and golden brown.

Common Questions

Loaded Caramel Magic Cookie Bars. Or try it in a Creamy Fruit Salad (just make with berries for low carb).
The longer you cook the condensed milk the darker it gets. Keep going and it will be caramel! If your keto condensed milk looks brown instead of golden or yellow it is because you cooked it for too long. It will turn to a thicker caramel-like texture the longer it’s cooked, so keep that in mind. Once it’s a very light golden brown color and sticks to the spoon it’s done, you don’t need to keep cooking.
Typically, homemade sweetened condensed milk is going to last 5-7 days. It does need to be refrigerated and in a sealed container. If it separates just warm it up a bit and give it a good stir.
You can even freeze the condensed milk for up to 4 months! Again, keep it airtight and it’s great to have on hand when you want it.

Keto Sweetened Condensed Milk
Ingredients
- 1/4 cup heavy cream
- 2 tbsp butter
- 1/2 cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
- 1 egg yolk
Instructions
- Bring the heavy cream, butter, and sweetener to a gentle boil and cook stirring frequently until it is light golden brown and thick enough to coat the back of a spoon. Remove from the heat.
- Cool until room temperature before stirring in the egg yolk
- OR, if you are impatient like me, very very stream the hot condensed milk into a bowl with the egg yolk while whisking like crazy.

I did this several times and could not get my milk to not crystallize and be thick, what did I do wrong? Was not of liquid form at all. I used Monkfruit granular and then tried with powdered and no luck,at all😫
Sweeteners are all so different it is hard to say. But if you are using a monk fruit erythritol blend like lakanto it should work.
Was using So Nourished Monkfruit/Erythritol Blend, but as it sat, it got thick and crystallized, like I needed more liquid, but I followed it exact and it wouldn’t work. I added more cream to get more liquid and since I had already made the cake, I went with it. Praying for a miracle when we eat it today after lunch. 🤣🤞Looked great up until it sat and became to thick. Thank you for responding. I will be attempting the recipe for the condensed milk again, I’m determined to get it right! 🥰
I had the same problem using Lakanto monk fruit, 1.5 times the recipe amount as instructed. After it cooled to room temperature, it was not pourable. Any tips?
You may have cooked it too long. If you cook this too long it turns into caramel. You want it to be very light brown when you stop cooking. The egg yolk is where most of the color is from. It might help to look through my photos.

Granulated is fine in this. I use G
granulated in everything that is cooked. Powdered sweetener is better for no bake desserts and icing.

It is optional. You can just omit it.

Can the heavy cream be substituted with something like coconut cream?
Yes, coconut cream works.
Says t butter. Is tablespoon or teaspoon? I wanna make the tres leches but for that one i need this recipe first. Hope you can answer
A lower case t or tsp is teaspoon. A capital T or tbsp is tablespoon. I will edit the post to clarify. This calls for 2 tablespoons.

It’s best used within a few days. Over time the sugar alcohols can crystallize. If that happens just warm it gently and stir.

No, the heat tempers the egg.
I am confused. If I start with 1/4c of heavy cream and cook it down, how do I end up with 2/3c of condensed milk? I don’t see how any of the other ingredients would add that much bulk?
You start with almost 1 cup of ingredients.
What’s the purpose of the egg yolks?
It helps thicken the condensed milk and gives it a richer flavor.
