This frozen lemonade will really hit the spot. It is sweet and tangy with the flavors of lemon and vanilla. You can’t taste the vodka so be careful you don’t overindulge. It was the perfect dessert drink after a long week.You can leave the vodka out if you are pregnant or choose not to drink alcohol (or you just want a yummy drink at 10am on a Tuesday morning).
The xanthan gum is really the secret ingredient. The drink doesn’t separate the way a lot of frozen drinks do. I read once that Starbucks uses it in their frappuccinos and since then I’ve always added a pinch to frozen drinks. Game changer.
This is low carb and sugar free.
2.5 oz fresh lemon juice (from two lemons)
2 oz vodka
1/4 cup THM gentle sweet sweetener (or my copycat or just sub your favorite sweetener to taste)
1 tsp vanilla extract
1/2 tsp lemon extract
12 ice cubes
8 oz lemon seltzer
pinch of xanthan gum (this helps the drink to not separate)
Blend ingredients in a blender until smooth.
- 2.5 oz fresh lemon juice (from two lemons)
- 2 oz vodka
- 1/4 cup gentle sweet sweetener (or my copycat or sub your favorite sweetener to taste)
- 1 tsp vanilla extract
- 1/2 tsp lemon extract
- 12 ice cubes
- 8 oz lemon seltzer
- pinch of xanthan gum
