While I had initially made these keto lemonade popsicles for myself to enjoy, the kids couldn't stop eating them as well. I didn't mind at all since the ingredients are so refreshing and simple! I'd much rather this be a family summer treat than something else that is loaded down with sugar. This is my substitute when I'm not wanting to make ice cream!
All you need is a little bit of patience, some popsicle sticks, and a love of lemonade and you're going to be in heaven. When you're craving something sweet without wanting any guilt, these sugar-free lemonade popsicles are the best. This recipe is as simple as adding in the ingredients, giving them a good stir, and mix in the blender, and enjoying the rewards!

Ingredients
Water - Use filtered water or tap water, either works just fine. Use seltzer or sparkling water for a unique texture.
Lemon juice - I like using fresh lemons and squeezing fresh lemon juice with a lemon squeezer.
Sweetener - You can use any type of sugar-free sweetener that you'd like. I use my own blend of xylitol (or allulose), erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia. If you'd like to use another sweetener such as monkfruit, Swerve, or Lakanto monk fruit I offer conversion tips in the recipe card.
Add some lemon zest - I'm all about adding more lemon flavor! Just a pinch of lemon zest can add flavor and add even more vitamin c to this recipe!
Add fresh mint leaves - If you want to add even more yummy tastes, throw a few fresh mint leaves into the blender. It's a simple addition that doesn't increase the prep time!
How To Make Keto Lemonade Popsicles
You're going to love the flavor of these low carb lemonade popsicles!
Step One: Blend together all the ingredients and pour them into the popsicle molds.
Expert Tip: You can fill the molds right to the top as the liquid isn't going to expand much once added.
Step Two: Place the popsicle sticks in the middle of the homemade ice pops. Pro Tip: To make the popsicle sticks stay put in the middle, freeze the molds for about 2 hours without the sticks in them, and then remove and add them.
The sugar-free lemonade mixture should be a bit slushy which will help the popsicle sticks stay in place.
After a total of 4-5 hours of freezing, this lemonade popsicles recipe should be ready to remove from the mold and enjoy.
Variations
Variations and substitutions are great but just keep in mind that they will change the net carbs, calorie count, and nutritional information.
Add strawberries - Add some fresh strawberries into the blender with the other ingredients. You can then have strawberry lemonade popsicles as well. Other berries such as raspberries, blackberries, and blueberries are equally delicious.
Peaches - Many people don't realize peaches are a low carb fruit. They actually have fewer net carbs than blueberries! Mix in some peach puree to the lemonade.
Extracts - You can easily change up the flavor of these ice pops. Add vanilla, lemon extract, orange extract, or even a little bit of a sugar-free flavored simple syrup to your popsicles to give them more flavor.
Squeeze in a bit of lime juice - If you like limes, add some lime juice! I highly recommend using a citrus juicer as it makes juicing a breeze.
Herbs - Not kidding. I love lavender lemonade and basil lemonade. Just toss a sprig into the blender with the lemonade, let rest for a few minutes, and then strain out the pieces.
Other sweeteners - If you don't need these to be keto and low carb you can sweeten them with honey or maple syrup.

Yes, you can use flavored water. This is a great way to add flavor, too. If you want to use flavored water, you can also use water that has added electrolytes as well as certain vitamins and minerals.
How long do lemon popsicles last in the freezer?
Once you freeze this keto lemonade recipe, you're going to want to eat them within 2-3 days. I personally think that they have a much better taste when they're enjoyed fresh!
Since this lemon treat is full of lemon flavor, I find that it's the strongest flavor eaten earlier after making them than later.
Do I have to use homemade lemonade for this recipe?
Since I'm focusing on keeping this popsicle recipe sugar-free and low carb, I like using this lemonade recipe to accomplish that. However, you can change up anything that you'd like.
Some people like to use a different sweetener like Swerve for these lemon ice pops, but that is totally up to you. Others like to add in a little bit of pink coloring to make these into pink lemonade popsicles as well.
I say make it however you want on a hot day and enjoy!
