I decided a few days ago I was going to do a cocktail every week (or a mocktail if you prefer those). It’s almost summer. It’s hot. (It is 85 degrees in my house and we don’t have our window air conditioners in yet). And when Friday rolls around I just need something cool to sip on.

Last Friday my drink of the week was this Frozen Orange Creamsicle. It does taste just like a creamsicle. My husband saw me making it and said “There is no way that is going to taste like a creamsicle”. But I proved him wrong. He took one sip and his eyebrows went up. “It does taste like a creamsicle”. And I didn’t even smirk. At least I tried not to.

As I write this it is a Friday. And I am currently sipping a Frozen Raspberry Cheesecake that is spiked with vodka just like this. It is incredible.

The vodka is optional. You can make any of my keto cocktails without it if you prefer.

 

Ingredients:

4 oz orange seltzer

2 tbsp sweetener

2 oz half and half or 2 tbsp heavy cream

1 tsp vanilla

5 drops orange oil or 1 tsp orange extract

8 ice cubes

pinch of xanthan gum (optional, helps to stop the drink from separating)

2 oz vodka (optional, if omitting you can add more seltzer)

a couple drops of red and yellow food coloring (optional)

Directions: Blend all the ingredients until smooth.

  • Blend all the ingredients until smooth.

Notes

Notes on Sweeteners: 
I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.
To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for. 
 
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
 
Substitutions will work in most recipes. They may not work in candies, such as caramel.
