when all of the ingredients will last over a month in your refrigerator why are you saying that when you combine them they will only last one week?

I am not a food scientist but I've found that when you combine an acid (lemon juice & pickles) with mayo the result lasts a shorter period of time. This could be good a month if you do use all fresh ingredients but I prefer to play it safe and only make the amount we will use in a week or two.
