My favorite Turkey Lettuce Wraps have swiss cheese, coleslaw, and homemade 1000 island dressing on crunchy romaine lettuce leaves. They are crisp and refreshing and a perfect light lunch.
Turkey Lettuce Wraps – New Jersey Sloppy Joe
The Jersey Girl in me is coming out in this post. As far as I know, New Jersey is the only place that has this type of “sloppy joe”. A New Jersey Sloppy Joe is a cold sandwich with sliced deli meat, swiss cheese, coleslaw, and 1000 island dressing on rye bread. It is crisp and refreshing. Even more so because I ditched the bread for crunchy romaine lettuce.
Lettuce wraps are one of my favorite summer lunches. Having 1000 island dressing and coleslaw prepped in the fridge makes this a breeze to serve for lunch. Even if you need to whip up the dressing and cole slaw first it only takes about 10 minutes.
Low Carb Thousand Island Dressing
I have to admit I used regular ketchup in the dressing. It only calls for a tablespoon and I didn’t have any sugar-free ketchup on hand. I figured about 1/2 teaspoon of regular ketchup per serving wasn’t too bad. Growing a baby is hard work and sometimes I have to take a short cut or two for my sanity. I’m sure as the days heat up and my belly gets bigger (I’m due early September with baby number five!) I’ll take a few more shortcuts. I’m ok with that.
This combo also works great as a salad. It can get a bit messy eating the lettuce wraps so if you prefer to eat with a fork and knife just cut them up into a salad.
How to Make Turkey Lettuce Wraps
I realize a recipe isn’t really needed to put some deli meat, cheese, and mayo on lettuce and wrap it up. BUT when your turkey lettuce wrap also has thousand island dressing and homemade coleslaw it will beat the other kind of lettuce wrap any day of the week.
What kind of lettuce for lettuce wraps?
I like the crunch of romaine but you can use almost any green lettuce. Some are more pliable to complete wrap up the wrap and some you eat more open faced like a crunchy taco.

Homemade Thousand Island Dressing Ingredients:

Easy Low Carb Coleslaw Ingredients:

Can I use leftover turkey?
Sure! These would be a nice change from just heating up Thanksgiving leftovers.
