What I love about this cottage cheese recipe is that it can be used with just about any type of pasta. You can use it in place of Alfredo sauce with fettuccine or spoon it over spaghetti, macaroni, penne, and more. It’s pretty incredible how smooth and creamy cottage cheese gets once it’s blended.

You can also use it with pasta substitutes such as spaghetti squash, zucchini noodles, or hearts of palm noodles for a keto option. Even these choices taste like comfort food with this decadent sauce.

Skip the traditional cream sauce and give this one a try. It pairs perfectly with tender noodles for a super-simple weeknight meal. Plus, adding cottage cheese is an easy way to work some extra protein into dinner.

Ingredients

  • Cottage cheese – Low-fat or full-fat cottage cheese will work. Large or small curd is fine since everything gets blended until smooth.
  • Colby Jack cheese – Adds plenty of cheesy flavor and helps make the sauce rich and creamy.
  • Parmesan cheese – Adds the salty, savory flavor you’d expect from a creamy pasta sauce.
  • Heavy cream or half and half – Either will work as they add richness and help with the texture. 
  • Onion powder – This adds a little onion flavor without needing to chop and cook an onion. You can add as much or as little as you like.
  • Garlic powder – Same as the onion powder, a time savor. You can add garlic to taste.
  • Salt – Salt will enhance the other flavors.
  • Black pepper – For added taste.

How to Make Cottage Cheese Pasta Sauce

Step One: Add all the ingredients to the food processor.

Step Two: Blend until smooth. Season to taste after mixing.

Step Three: Scrape the sides of the food processor and blend again. It will be thick. Add to your cooked hot pasta.

Step Four: Mix in the sauce. For a thinner sauce, just add the liquid of your choice.

Top Tip💡

For an extra creamy cottage cheese pasta sauce, let the food processor run until you can’t see any cottage cheese curds. If the sauce is thicker than you’d like, add liquid a little at a time. It’s much easier to thin the sauce than fix one that’s gotten too watery.

Substitutions

  • Seasonings – You can add just about any seasonings you like to this creamy sauce. Red pepper flakes, Italian seasoning, fresh basil, or extra garlic are all good options.

Variations

  • Pasta – Use your favorite pasta or whatever you already have in the pantry. Fettuccine works well for a cottage cheese Alfredo-style pasta, but you can also use penne, chickpea pasta, protein pasta, or gluten-free pasta. You can even use the sauce in lasagna.
  • Meat – Add cooked chicken, sausage, or ground beef to turn it into a heartier meal.
  • Vegetables – Stir in broccoli, spinach, peas, cauliflower, mushrooms, or roasted vegetables.

Equipment


To make this high-protein pasta sauce, you’ll need a food processor and spatula. You can also use a high-speed blender.

Storage

Once you make the sauce, store leftovers in an airtight container in the refrigerator for up to a few days. Reheat it gently and add a splash of milk or cream if it thickens in the fridge.

I don’t recommend freezing it since dairy-based sauces can separate after thawing.

How can I make this into a complete meal? 

Pair the sauce with your favorite pasta and add chicken, sausage, or another protein if you’d like. A salad or some roasted vegetables on the side makes it an easy complete dinner.

Does cottage cheese pasta sauce taste like Alfredo sauce?

It isn’t exactly the same as traditional Alfredo, but it has a similar creamy, cheesy flavor. Once the cottage cheese is blended with Colby Jack, Parmesan, and cream, its flavor is mild and you don’t really notice the curds at all.

Can you taste the cottage cheese?

Not much. Cottage cheese has a mild flavor, and blending it with the other cheeses and seasonings makes it taste much more like a creamy cheese sauce than a bowl of cottage cheese.
