Ingredients

For the Sun Dried Tomato Vinaigrette

  • Sundried tomatoes – They need to be in oil, and undrained.
  • Extra virgin olive oil – Helps with the texture of the dressing. 
  • White vinegar – Adds a tangy flavor to the homemade sun-dried tomato vinaigrette. 
  • Water – Thins out the texture without compromising flavor. 
  • Salt and pepper – For flavor. 

For the Creamy Sun-Dried Tomato Dressing

  • Sundried tomatoes – They need to be in oil, and undrained.
  • Greek yogurt – This adds the creaminess to the sundried tomato dressing. 
  • Mayonnaise – A great addition for more texture. 
  • Salt and black pepper – For added flavor.

How to Make Sundried Tomato Salad Dressing

Step One: For either version of the dressing, combine all the ingredients in a high-speed blender.

Step Two: Blend the ingredients until smooth. 

Top Tip💡

If you don’t have a blender, you could use a mixing bowl and a whisk to mix until smooth. You will need to chop the tomatoes as fine as possible. It will take a bit more time and effort, but it will still have the same wonderful flavor.

Substitutions

  • Red wine vinegar – You could use this instead of white vinegar. You could also use white wine vinegar or white balsamic vinegar. 

Variations

  • Fresh herbs – Adding fresh herbs like fresh basil leaves is a great way to kick up the flavor. 
  • Seasonings – Feel free to add other seasonings like garlic powder, red pepper flakes, Parmesan cheese, onion powder, or anything else that you want to add for extra flavor.

Equipment

To make this sun-dried tomato vinaigrette dressing (and creamy version), you don’t need much! A high speed blender or food processor is really all that you should have to use. You can also use a whisk and mixing bowl if you don’t have any equipment on hand. 

Storage

Once you make this dressing, store it in a mason jar and keep it in the fridge. That way, it’s ready to use the next time you need to top your fresh salad. You’ll likely want to give it a quick stir to mix it again, just in case it’s separated before pouring.

What pairs well with the tomato flavor of this dressing? 

You have so many options! You can use this on a Mediterranean salad, as a dip for your favorite veggies, on top of a Greek salad, or even in breakfast bowls mixed with eggs and sausage. I love using it on my favorite salads, but it really does add so much flavor to any dish that you want to pair it with. 

Can I add cheese to this dressing? 

I wouldn’t add anything directly to the dressing, but you could absolutely add some feta cheese as a topping to it once it’s added to the dish. This is a simple and delicious way to change up the flavor profile without any extra effort. 

Can this be a dip?

Absolutely. I would add less oil so it is thicker. If you want to dip some sliced green peppers or celery sticks into this tomato recipe, you’ll love the flavor.

Ingredients
 
 

Vinaigrette

  • 1/2 cup sundried tomatoes in oil, undrained
  • 1/2 cup extra virgin olive oil
  • 1/4 cup white vinegar
  • 2 tbsp water
  • 1/2 tsp salt
  • 1/8 tsp pepper

Creamy

  • 1/3 cup sundried tomatoes in oil, undrained
  • 1/3 cup Greek yogurt
  • 1/3 cup mayo
  • 1/2 tsp salt
  • 1/8 tsp pepper

Instructions
 

  • Combine ingredients for the recipe of your choice in a small blender.
  • Blend until smooth.
  • Alternatively, you can finely chop the tomatoes, add them to a bowl with the remaining ingredients, and whisk until smooth.
