This really is a great snack or a great option for a low-carb dessert. Not only is it an excellent source of protein, but it’s a keto dessert that doesn’t taste low carb at all. I’ve made this sweet snack for family and friends who aren’t on the keto diet, and they’re always shocked by the smooth consistency, texture, and flavor. 

If you have a sweet tooth, this really is a great way to curb it without feeling the guilt. The added high protein content helps you feel fuller after eating it, too – which is a win-win! Ingredients

  • Cottage cheese – I prefer to use full fat cottage cheese. But you can use any type of regular cottage cheese that you want. 
  • Joy Filled Eats Sweetener – The best way to add sweetness to recipes without using artificial ingredients.
  • Lemon zest or vanilla extract – Adds flavor to this easy, elegant dessert. 
  • Fresh berries – This is optional, but pairs perfectly with the custard-like texture.

How to Make Whipped Cottage Cheese Dessert

Step One: Add the cottage cheese to a food processor and pulse until it is smooth and without lumps. Mix in the sweetener and then taste it. You may have to add more, depending on your flavor preference.

Step Two: Add the vanilla extract or lemon zest. Or use both!

Step Three: Divide the creamy mixture between mason jars, bowls, or containers.

Step Four: Layer with fresh berries.

Top Tip💡

To get a creamy consistency, really let the food processor or high speed blender mix it. You can’t really overmix, so just let it go. 

Substitutions

  • Savory version – If you aren’t craving a dessert or are not a fan of sweet recipes, you can make this blended cottage cheese dish into a savory one. Just leave out the vanilla and sweetener, add some salt and pepper, and top with some fresh herbs and olive oil for a yummy dip. It would go great with pita chips! 

Variations

  • Add your favorite toppings – The fun part about making cottage cheese recipes like this is that you can easily change the flavor. You can top it with maple syrup and fresh fruit, or even curb those chocolate cravings and add dark chocolate chips and fresh strawberries. Mix and match the recipe ingredients to find the perfect combo! 
  • Sweetener – While I love using my own keto-friendly sweetener, you can use honey, maple, or any sweetener that you want. They all work and pair just fine.
  • Add protein powder – Add a protein boost to this simple recipe! You can easily hit your protein goals by making this treat part of the equation. Just add a scoop of protein powder and blend it well with the rest of the ingredients.

Equipment

A high-speed blender or small food processor is really the only main ingredient needed for this recipe. You’ll also want to have small bowls, mason jars, or other containers for storage. 

Storage

Store leftovers in an airtight container and keep them in the fridge. For the best results, eat within 1-2 days. This recipe isn’t a good contender to be frozen, so be sure to enjoy it fresh for all the best flavors.

Can I eat this for breakfast? 

Absolutely! I’ll make this a high-protein breakfast option any day of the week. The smooth cottage cheese pairs really well to be savory or sweet, so you can enjoy this delicious treat anyway you want. Add some chocolate protein powder to it to start the day with a cottage cheese chocolate pudding, or spread it on some low-carb bread with some avocado slices for a fast and simple meal. 

What if I don’t like the taste of cottage cheese? 

If you follow the steps on the recipe card and really blend all the ingredients well, you won’t taste it – at all. The key is to make sure that it’s blended so that it has a smooth consistency. The lemon zest masks the taste of the cottage cheese very well.

  • Add cottage cheese to a food processor. Process until smooth.
  • Mix in the sweetener. Taste and add additional sweetener, if desired.
  • Add the lemon zest or vanilla extract.
  • Divide between small jars or bowls, layering with fresh berries, if desired.

Notes

Notes on Sweeteners: 
I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.
To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for. 
 
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
 
Substitutions will work in most recipes. They may not work in candies, such as caramel.

  3. My hubby and I just recently tried this dessert. I must admit, I was skeptical about cottage cheese feeling like a dessert and wondered if it would really feel like a “whipped” dessert. I was surprised! we enjoyed it. We made it with the vanilla extract – I think it made the tang of the cottage cheese less tangy and of course the sweetener really helps it taste dessert-y.
