Hello! I am thrilled to be providing a guest post for Taryn’s blog! Today I will be sharing my recipe for PB&J bars with Nutella drizzle! These peanut butter bars with homemade Nutella are a great treat to have with tea in the afternoon or to pack in a lunch bag (maybe use sunflower seed butter if it is going to school!) and of course they are perfect on a holiday cookie plate.

A little about me: I am Erin, a low-carb and gluten-free recipe developer, and food blogger! I have always been into cooking and playing around with recipes, especially coming up with low-carb versions of the delicious, rich comfort foods and treats that my family enjoys. I love that I am still able to indulge in guilt-free lasagna, pancakes, muffins, and bread without gaining weight or feeling bloated and tired as I do with the white sugar/white flour versions. I created My Flourless Kitchen as a place to keep track of my recipes and also as an opportunity to share them with like-minded folks like you!

The Christmas season means two things: family and cookies. Am I right? I am a pretty big cookie person year-round, but at the holidays there are cookies at every party, gathering or meeting and I am not complaining. By my definition, “Christmas cookies” should really include a well-rounded combination of cookies, squares, truffles, and bark.

Over the years I have modified many of the classic Christmas cookie recipes to be healthy and low carb and I have also added a few new favorites to the mix! This recipe for PB&J bars is made without sugar or flour and it is still a big crowd pleaser!

Sugar-Free Raspberry Jam

I use my homemade raspberry jam for this recipe as I have yet to find a jar of jam in the store that is sweetened with anything other than sugar or sucralose or maltitol. It’s pretty quick but I make small batches because it doesn’t keep as long as the sugary kind. If you have a store-bought jam that you like, feel free to use that instead of making your own sugar-free raspberry jam. It doesn’t have to be raspberry either- the fresh strawberry jam here from Taryn at Joy Filled Eats, blueberry or blackberry work nicely in this recipe too.

Homemade Nutella without Sugar

The Nutella drizzle is optional, but highly recommended! It brings these delicious peanut butter bars to the next level. There is a store-bought version of Nutella that is sweetened with erythritol, but it is hard to find. If you can’t find any, you can make your own with my 2-ingredient sugar-free Nutella recipe or you could just do a melted chocolate drizzle.

These Peanut Butter Bars with Jam and a Homemade Nutella drizzle are simply scrumptious. They have so much flavor in every bite.

Ingredients
  • ½ cup natural peanut butter
  • ½ cup softened butter
  • 2 eggs
  • ½ cup powdered erythritol (such as Swerve)
  • ¼ cup almond flour
  • 1 tbsp coconut flour
  • ¾ cup sugar-free raspberry jam <--- click for recipe
  • ½ cup sugar-free Nutella <--- click for recipe, optional
Instructions
  1. Mix peanut butter, butter, and eggs together with electric beaters until combined. Add dry ingredients and mix again until you have a smooth batter.
  2. Spread half of the batter into a 9x9 pan. Place dollops of jam on top of the batter and then top with the rest of the batter. Swirl the jam and batter together with a knife.
  3. Bake at 350 for 25-30 minutes until the edges are brown.
  4. Drizzle with Nutella or melted chocolate.

    These bars are very good, however, the crust is grainy feeling. But aside from the texture they’re tasty.

    I absolutely loved this recipe !!! I used sugar free jam and it tasted too sweet so next time I plan on using less jam. Quick question though, am I able to freeze these after cooked ? Thank you !

      Yes. I think I'd wrap them individually with plastic wrap so they don't stick together.
