Keto Creamy Chicken Casserole is a perfect meal option for busy weeknights. Deliciously made with shredded chicken, spaghetti squash, cream cheese, mayo, sour cream, mozzarella cheese, crispy bacon, and seasoned perfectly.

No need to dirty up a bunch of dishes with this one-pan meal! And let me tell you…it’s so EASY! With all the kids, life can be hectic. While I am a foodie and love cooking, there are days that I seriously don’t want to step foot in the kitchen. 

What I love about this creamy chicken casserole recipe is that I can make it quickly without a huge fuss. Fewer dishes mean less clean-up, and that makes me very happy too. But the best part is that I can put this healthy casserole in front of my family, and they will devour every last morsel. Those “happy plates” tells me all I need to know about this keto casserole.

Ingredients

Chicken – Any shredded chicken, leftover chicken from a roast chicken, or leftover rotisserie chicken will work. You can use chicken breast, chicken tenders, chicken thighs, or a combination.

Spaghetti Squash – I simply half, remove the seeds and cook in the instant pot for 8 minutes.

Cream Cheese – It’s easiest if you use softened or room temperature cream cheese.

Mayo – Any variety of mayo will work.

Seasonings – I like a combination of onion powder, garlic powder, salt, and black pepper. 

Mozzarella – You’ll need it for the casserole and the topping too. 

Bacon – Freshly cooked and crumbled is delicious but 100% real bacon crumbles are what I normally use in casseroles.

Chopped Chives – If chives are out of season you can use some very finely sliced green onions in their place.

How To Make Keto Creamy Chicken Casserole

Just four simple steps are between you and this incredible easy dinner casserole. Let’s take a look.

First Step: Begin by preheating the oven to 350 degrees. 

Second Step: Combine the softened cream cheese, mayonnaise, sour cream, and seasonings together in a large bowl. Then add in the chicken, spaghetti squash, mozzarella cheese, and bacon crumbles. Spread it all into a 9 x 13 greased baking dish.

Third Step: Sprinkle the bacon, cheese, and chives on top.

Fourth Step: Bake the unbaked casserole for 30 minutes or until it’s hot, and the cheese is bubbly.

Chicken Casserole Variations

Naturally, you can make a few adjustments to make this your own family favorite. Here are a few great options that I think you will enjoy.

Mushrooms – Adding a few sliced mushrooms from the casserole is a great way to add some earthy flavor. 

Onions – You can either add fresh-cut onions or saute some in a little bit of olive oil before adding them to the keto casserole. One trick I have is to bake the onions in the casserole dish to soften them before mixing them in and putting the filling in the casserole. I love to save on washing dishes whenever possible.

Dijon Mustard – To add a kick of flavor, add in 1-2 teaspoons of some dijon mustard.

Cheddar Cheese – We love the way that mozzarella tastes in this combination, but you can also add in some cheddar cheese. 

Pepper Jack Cheese – If you want a little bit of spice, shred some Pepper Jack cheese and sprinkle on top. Yum!

Spinach – To add extra nutrients, add in a cup or so of spinach. It’s going to add some tasty flavor and brightness too! 

Crunchy Topping – If you love a crunchy topping on casseroles (such as one made with Ritz crackers or bread crumbs) you can make a pork rind panko topping instead. Just add this topping. It’s a combination of pork rinds, parmesan cheese, and melted butter. And it is amazing on this easy creamy chicken casserole.

Cauliflower Rice – If you normally add white rice to casseroles just mix in some cauli-rice instead.

Common Questions

Can You Freeze Creamy Casseroles?

Yes, I use a similar sauce in my other chicken casseroles and have had success freezing them. I do prefer them fresh but leftovers freeze just fine. Sometimes I’ll make an extra casserole just so I can freeze lunch-sized individual portions for myself. 

Do I need cream of chicken soup or cream of mushroom soup?

Nope! You don’t need any canned soup for this recipe. My blend of mayo, sour cream, and cream cheese gives it all the creaminess it needs. You can make your favorite classic comfort foods healthier.

What To Serve With Keto Chicken Casserole?

This keto creamy chicken casserole is pretty much an entire meal, and there isn’t a lot of need for sides and extras. However, if you are in the mood for something extra or are feeding a hungry group of people, you might as well make all the sides. Here are a few ideas:

  • Preheat the oven to 350.
  • Mix together the sauce ingredients. Stir in the chicken, spaghetti squash, mozzarella, and bacon. Spread in a greased 9 x 13 baking dish.
  • Top with the remaining cheese, bacon, and chives.
  • Bake for 30 minutes or until hot and bubbly.

Notes

Nutrition: this casserole has 8 servings. Each serving is about 1.25 cups and has 3 NET carbs. I just eye up portions as I serve. For a more exact measurement weigh your casserole dish empty and then full. Divided the difference by 8 for the weight of each portion.
Substitutions: you can swap the shredded chicken for shredded turkey. It’s great to use leftover turkey from the holidays. You can swap in any cooked low carb vegetable for the spaghetti squash. Broccoli, cauliflower, spinach, and zucchini all work very well.
Prep Time: you’ll need to cook the chicken and spaghetti squash ahead of time. This will save time when you are preparing the casserole. 
To Reheat: warm the keto casserole in the microwave for 1-2 minutes on a microwave-safe plate. Cover it with a paper towel, so it doesn’t splatter. You can also heat in the oven at 350 degrees for 10-15 minutes or until hot.

  1. Very good, my husband enjoyed it too, so this is the second time I’ve made it. This time I added a tablespoon of ranch seasoning mix, used the spaghetti squash, spinach and added green beans to fill it out. Plenty of cheese, added a splash of milk to help thin out a bit.   2. Why would you say the prep time is 10 min & cook time is 30 min when you clearly need to cook the chicken & shred it & cook the squash & shred it before you can even start making this? Sounds so good but MUCH too time consuming!

    1. You can buy cooked and shredded chicken nowadays in most stores. Cooked spaghetti squash is a little harder to find but I have seen it. This recipe is also a great way to use up leftovers.

    1. To add a vegetable to the casserole to make a one-dish meal. You can leave it out or sub in another vegetable such as broccoli, spinach, or cauliflower.

The idea is to have some frozen meals prepared to give to someone recovering from an illness or coping with a death in the family. At what point should the casserole be frozen? Before heating it all together or after? Or is this a good casserole for this?5 stars

  7. This is such a good and versatile recipe. I liked it as posted. I loved it after substituting sausage and shrimp for the bacon and chicken and adding cauliflower rice, onions and green beans. I mixed in cheddar cheese with the mozzarella cheese, and it’s now my “go to” meal. Five stars-plus!5 stars

  8. I made this casserole tonight it was perfect it was creamy and very easy to make. My husband didn’t want the bacon but everything else was kept the same except I put hot sauce and cayenne pepper in it. I also cooked it for 45 minutes it was delicious. Husband loved it too. Will definitely make it again.5 stars

  9. Do you find after freezing this that it’s watery? I feel like I’ve had this problem with freezing spaghetti squash.
