White wine - Adds taste and pairs well with the broth. I use an inexpensive dry white wine for cooking such as pinot grigio.
Chicken broth - You could also use chicken stock or vegetable stock.
Lemon juice - For flavoring. Fresh or bottled lemon juice will work.
Garlic powder - Great for adding flavor.
Salt - For taste. You can omit the salt, if needed.
How To Make This Creamy Chicken Piccata Casserole Recipe
Step One: Preheat the oven to 350 degrees. Spray a 9X13 casserole dish with nonstick cooking spray.
Step Two: Add the cauliflower rice to the bottom of the dish.
Step Three: Add the chicken on top of the rice.
Step Four: Mix all the sauce ingredients together in a bowl.
Step Five: Spread the sauce mixture on top of the chicken.
Step Six: Add the cheese.
Step Seven: Put the casserole dish into the oven and bake for 30 minutes.

Broil - Once the traditional chicken piccata is done cooking, you can turn the oven to broil for 2-3 minutes to brown the top. Just be careful to watch so that you don't burn it.

I prefer using white meat chicken in dishes like this but if you want to use boneless skinless chicken thighs you can.

If the creamy sauce needs to be a bit thicker, you can stir in a little bit of xanthan gum or glucomannan. For a non-keto option cornstarch works well. Just be careful to add a little bit, as too much will make it too thick.

Instructions
