How To Make This Creamy Chicken Piccata Casserole Recipe
Step One: Preheat the oven to 350 degrees. Spray a 9X13 casserole dish with nonstick cooking spray.
Step Two: Add the cauliflower rice to the bottom of the dish.
Step Three: Add the chicken on top of the rice.
Step Four: Mix all the sauce ingredients together in a bowl.
Step Five: Spread the sauce mixture on top of the chicken.
Step Six: Add the cheese.
Step Seven: Put the casserole dish into the oven and bake for 30 minutes.

Broil - Once the traditional chicken piccata is done cooking, you can turn the oven to broil for 2-3 minutes to brown the top. Just be careful to watch so that you don't burn it.
Add toppings - Once the casserole has cooked, top with fresh parsley, extra sauce, or black pepper for more flavor.
Add pasta - If you didn't want to use cauliflower rice, you could always use penne pasta or angel hair pasta. Cooked pasta works really well with the rest of the ingredients, but it does change it from a low carb dish to one that isn't.
Raw chicken - To make this with chicken cutlets or chicken tenderloins simply bake them until they are mostly cooked (about 140-145 degrees) and then drain the cooking liquid. Add the cauliflower rice, tangy lemon sauce, and cheese and continue baking until they reach 160. Let them rest so they reach 165. I prefer using white meat chicken in dishes like this but if you want to use boneless skinless chicken thighs you can.
How do you thicken the piccata sauce?
If the creamy sauce needs to be a bit thicker, you can stir in a little bit of xanthan gum or glucomannan. For a non-keto option cornstarch works well. Just be careful to add a little bit, as too much will make it too thick.
What if I don't have cooked chicken?
If you don't have chicken already cooked, you can cook your own chicken or see the raw chicken variation listed above. Just be sure to use a meat thermometer and make sure that the internal temperature of the chicken is 160 degrees.
