This easy gluten-free Flourless Mug Cake takes less than 5 minutes from start to finish. This is a simple chocolate dessert loaded with flavor. This just might be the easiest low carb keto dessert recipe you’ll ever make!

Have you ever just been sitting in your house, wishing that you could make a dessert that’s the perfect serving size for one? This is what this simple mug cake recipe is all about. It’s the best “staying in and relaxing” dessert, ever.

While I’m pretty much obsessed with eating this simple “cake for one”, it’s also a recipe that the kids will love, too. The ingredients are simple and the recipe is fast. Those two aspects combined create an amazing chocolate dessert. I’ve made many healthy mug cake recipes recently but this may be my ultimate favorite.

Ingredients Needed

As I mentioned earlier, the ingredients in this simple mug cake are easy. More than likely, you’ll have them all in your cupboard making for an even fast and simpler recipe than you ever thought possible.

  • Butter – Unsalted butter works best for this ingredient. 
  • Joy Filled Eats Sweetener – I like to use my homemade sweetener for this recipe but some people use Stevia as well. 
  • Egg Helps to hold the batter together and add moisture and protein. 
  • Coconut Milk Mixed with the other ingredients, this adds healthy fat to this gluten-free mug cake.
  • Vanilla A teaspoon of vanilla goes a long way. 
  • Cocoa Powder – I use unsweetened cocoa powder in this recipe. 
  • Baking Powder Gives the fluffy texture to the cake recipe. 
  • Salt – Just a pinch cuts the sweetness and enhances flavors.

How To Make Flourless Mug Cake

Although I typically don’t use a microwave for desserts, this one is near and dear to my heart and makes me rethink that stance. You’re going to love how EASY this is. You can prepare this mug cake in the microwave and it will take less than a few minutes to make.

Step One: Add the chocolate and coconut oil to a mug that is microwave-safe. Heat it for 30 seconds and stir. You’re going to want to it be smooth and lump-free!

Step Two: Add the sweetener and the rest of the ingredients on the list. Stir.

Step Three: Pop the flourless mug cake in the microwave for about one minute. Microwave times vary a lot so you can start with 45 seconds and check every 15 seconds until the top looks dry around the edges.

Variations

Since there are very few ingredients in this recipe, there aren’t a ton of variations that would really work. To alter this gluten-free chocolate mug cake, you can try one variation and see what you think.

Almond Milk – Instead of using coconut milk, you can see what you think of almond milk. It won’t be as sweet but it should still give the texture.

Do you eat mug cakes hot or cold?

It’s a little bit of both! You want to cook it so it’s hot but then you want to let it cool before digging in. The hardest part of this entire flourless mug cake recipe is waiting patiently for it to cool down a little bit.

Be aware because the middle of the chocolate cake is much hotter than the top of the cake, and that can be tricky and burn your mouth if you’re not careful. I like to use my spoon and poke a hole in the middle to let some of the hot air escape out and cool.

Can I reheat this flourless chocolate mug cake?

Trust me, I totally get this question. As a mom, I find myself reheating things over and over again because I hardly ever have the time to sit down right away and enjoy it the first time.

If you need to reheat this flourless mug cake, just do it in 30-second intervals until it’s nice and warm. I promise that you’re going to love this keto mug cake.

  • In a microwavable mug combine the ingredients. Stir until smooth.
  • Microwave for about 1 minute.

Notes

Nutrition: This recipe makes one mug cake. A serving is the whole recipe. There are 4.6 NET carbs per serving.
Cook Time: Microwaves vary a lot. If you have a high powdered microwave start slow and just microwave for 30 second and then for 15-second intervals after that.
Notes on Sweeteners: 
I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.
To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for. 
 
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
 
Substitutions will work in most recipes. They may not work in candies, such as caramel.

  1. This was SO good! I didn’t have enough cocoa powder so I threw in some Lily’s sugar-free dark chocolate chips to make up what cocoa powder I was short on. I also didn’t have any coconut or almond milk so I used heavy cream. SO GOOD! And I whipped some of the heavy cream to go with it. It tasted like a dessert you could get at a restaurant, not even kidding!5 stars
