I’m a big fan of warm butter melting over tender steak. The combination is a little secret that every home cook should know. Adding butter makes the cooked steak juicy, tender, and full of flavor. Simple – yet satisfying in every bite. 

My husband and I been making this simple steak recipe for years – and I’ve yet to tire of it!

Ingredients

  • Filet mignon – I use two filets for this recipe. 
  • Olive oil – Helps to have the steak not stick to the pan, and also helps to form a bit of a brown crust on the edges. 
  • Salted butter – For flavor, juiciness, and overall deliciousness. 
  • Salt and pepper – Add to your liking and personal preference. I normally use kosher salt and fresh ground black pepper.

How to Make Butter Poached Steak

Step One: Season the steak with salt and pepper.

Step Two: Preheat a deep skillet to medium heat. Add the oil. Place the steak filets in the skillet and cook for 2 minutes per side.

Step Three: A crust should form, then flip. Reduce to low heat and add the butter to the skillet.

Step Four: Use a spoon to spoon the melted butter on top of the steak.

Step Five: Cook and baste the steaks with butter for about 3-5 minutes. Continue until you get the steak to your desired doneness.

Step Six: Take the steaks from the pan, let them rest, slice and plate them. Pour any leftover butter over the top and serve. 

Top Tips💡

The key to cooking pan-seared steaks is to not let the steak stick to the bottom of the pan. A crust needs to form before you try to flip them.

Keep in mind that depending on the inch of thickness of the steak, the cooking time will likely vary. This is where having the probe of an instant meat thermometer inserted into the steak will give you an accurate reading to know when to pull the steak from the pan. For medium rare you are looking for an internal temperature of 130-135°F.

Substitutions

  • Beef – You can use other types of steak for this recipe. You can use rib eye steak, NY strip steak, or any other cut. 
  • Seasonings – Salt and black pepper are really all you need for seasoning, but you can also add other flavors like garlic, rosemary, or anything else that you want. For a Greek flavor try adding oregano and lemon zest or my Mediterranean Seasoning. Or just kick up the flavors with homemade Seasoning Salt.

Variations

  • Unsalted butter – You can use unsalted butter for this recipe if that is what you have on hand. Just add an extra pinch of salt. You can also swap in clarified butter if you want.

Equipment

To make this recipe, you’ll want to have a skillet, heavy-bottomed pot, or a very hot cast-iron pan, and have tongs to grab and flip the steak. 

Storage

Let the leftover steak come to room temperature, and then store any remaining bites in an airtight, clean container. You can keep it to reheat and enjoy later. 

It is also excellent served on salad.

Common Questions

Could I cook the steak on a hot grill instead? 

You could. You can make this steak on the grill, and then just add a pat of butter on top when it is done and resting on a plate or cutting board.
Do not add butter to the steak while it is on the grill. The fat could make the grill catch fire.

How can I use leftover steak?

I normally just reheat steak gently and enjoy again as is. But you could easily cut up the steak and add it to salad, chilis, & stews for a pop of flavor and taste. 

What side dishes pair well with steak? 

You can make it a fancy dish and serve it with lobster tail, or keep it simple and serve it with a green vegetable like broccoli or Brussels sprouts. A simple side salad is also a great option and addition.

Ingredients
 
 

  • 8 oz filet mignon (2 filets)
  • 1 tbsp olive oil
  • 3 tbsp salted butter
  • salt and pepper to taste

Instructions
 

  • Season steak with salt and pepper
  • Preheat a skillet to medium heat.
  • Add the oil.
  • Place the filets in the frying pan and cook for 2 min per side until a crust forms. Flip the steaks.
  • Reduce heat to low. Add the butter to the pan.
  • Use a spoon to spoon the melted butter on top of the beef. Continue cooking and basting the steaks with the butter for another 3-5 minutes until your desired doneness.
  • Remove the steaks from pan and plate.  Pour the remaining butter over the top and serve.
