This rosemary sauce recipe is SO delicious. While you can easily save it for a special occasion, why wait? This easy recipe is perfect for a picky eater, and a great way to add fun flavors to busy weeknights. It’s one of my favorite recipes because the flavorful sauce goes well with meats, vegetables, side dishes, and more. 

I’ve made this rosemary cream sauce recipe many times, from casual dinners to holiday meals. And all I know is that there is rarely extra sauce left over at the end of the dinner!

Ingredients

  • Salted butter – Needed for flavor and richness. 
  • Garlic – I use a fresh garlic clove.
  • Onion – Any type of onion, chopped very finely, works. 
  • Heavy cream – This adds a thickness to the texture and flavor. 
  • Fresh rosemary – Fresh rosemary leaves chopped finely add the best flavor! 
  • ​Xanthan gum – Helps thicken the sauce.

How to Make Rosemary Cream Sauce

Step One: Melt the butter in a saucepan over low heat.

Step Two: Add the chopped garlic and onion. Cook until softened. Add the rosemary.

Step Three: Stir in the heavy cream, and simmer the creamy mixture for 5 minutes. If desired, you can strain out the bits of rosemary.

Step Four: Sprinkle the xanthan gum over the top and let it simmer for 1-2 minutes or until thickened. 

Top Tip💡

If all you have is unsalted butter, add a pinch of salt. Also, as the sauce is cooling, it will continue to thicken. 

Substitutions

  • Fresh herbs – While rosemary is the star of the show in this rosemary garlic cream sauce, that doesn’t mean you can’t add other flavors. Thyme, basil, sage, or other fresh herbs could be a good addition. 

Variations

  • Cheese – You can add parmesan cheese and stir for a fun pop of flavor in this creamy rosemary sauce. Think of it like rosemary alfredo.
  • Seasonings – Feel free to add seasonings like garlic salt or garlic powder. Lemon zest adds a nice tang.
  • Wine – A splash of dry white wine could be a fun and flavorful option.

Equipment

All you’ll need to make this sauce recipe is a medium or large skillet and a spatula to stir. 

Storage

​If you have leftovers of this rosemary sauce, let it cool and then store it in an airtight container and keep it in the fridge. You can then reheat in the microwave and use again for another weeknight meal or simple dinner. 

Due to the addition of the heavy cream, this sauce shouldn’t be frozen. It’s best used fresh, stored in the fridge, and then reheated to use again.

Common Questions

How do I serve this rosemary sauce? 

There are a ton of options! You can see it on my Butter Poached Steak in these photos.

You can serve this with pork tenderloin, creamy chicken pasta, fresh vegetables, as a flavor enhancer for regular chicken breasts and juicy chicken, or even as a topping for brown rice or cauliflower rice. 

It’s also a fancy pairing for pork chops and filet mignon. I’ve even used it as my main pasta sauce for cooked al dente noodles. 

Why is my sauce so thin? 

Make sure that you’re being patient while it cools down. As it cools, it will thicken up. If it’s still too thin after it has cooled some, you may need to add some extra xanthan gum. The consistency of this sauce recipe should be thin and pourable, but not runny. If it’s too thick, you can always thin it out with a little bit of chicken stock, or even a tad bit of milk or oat milk. Just be careful. A little bit of any thinning or thickening agent will go a long way, and it can be hard to find the perfect balance.

  • 1/4 cup salted butter
  • 1 clove garlic crushed
  • 1 tablespoon onion very finely chopped
  • 1 cup heavy cream
  • 2 tbsp fresh rosemary very finely chopped
  • 1/4 tsp xanthan gum

Instructions
 

  • Melt butter in a medium saucepan over low heat.
  • Add the garlic and onion. Cook until softened. Add the rosemary.
  • Stir in cream and gently simmer for 5 minutes.
  • Sprinkle xanthan gum over the top. Simmer for 1-2 minutes or until thickened.

Notes

Storage – This will thicken in the fridge. Just reheat and stir as needed.
