Taco Stuffed Peppers
These Taco Stuffed Peppers are a great way to make stuffed peppers. Dinner bakes on one baking sheet and the pepper rings cook faster than big stuffed peppers or meatloaf.

I saw the pin for these Mini Meatloaf Pepper Rings on Pinterest a few months ago and have wanted to make my own version since then. My kids like meatloaf but they loooove tacos. I decided to make my stuffed pepper rings have a Mexican twist.

Make sure to save the tops and bottoms of the peppers for another recipe. You can toss them into a green salad or even make roasted red pepper soup.

One of my frugal mom tips is to make your own taco seasoning. It comes out much cheaper per ounce than the little packets and it’s all seasonings, no fillers or bulking agents.
For the taco seasoning in these taco stuffed peppers, I just use the cheap $1 bottles of spices found in many grocery stores. You need onion powder, garlic powder, minced dried garlic, minced dried onion, paprika, cumin, chili powder, oregano, crushed red pepper, salt, and pepper.

Taco Stuffed Peppers
Ingredients
- 5 sweet bell peppers cut into 1 inch thick rings
- 1.5 lb ground turkey
- 2 green onions chopped
- 2 tbsp taco seasoning
- 1 egg
- 2 oz cheddar cheese cubed
- 2 oz monterey jack cheese cubed
- 1/2 tsp salt
Instructions
- Preheat oven to 400. Spray a baking sheet with cooking spray and put the pepper rings on top.
- Combine all the other ingredients. Divide the meat between the pepper rings.
- Bake for 20-30 minutes or until the meat is cooked through.
- Serve with sour cream, cilantro, and/or salsa.

This is a great idea! Can you freeze any leftovers or will the peppers get mushy if you do?
Peppers freeze ok but not great. I would freeze leftovers but wouldn’t purposely meal prep this to freeze.
What would you serve with this? For kids and adults following THM?
A green salad, cauliflower rice (or brown rice for a crossover), and taco fixings.
So do you just stick a few pieces of cubed cheese in each pepper ? And do you put the uncooked meat into the peppers the the toppings , cheese seasoning etc ? Thank you
You mix the cubed cheese and seasonings together with the raw meat. And then press that into the pepper rings. Add any toppings you like after cooking. Enjoy!
Doesn’t the meat and cheese spill out the bottom?
No, since you are using raw ground meat it holds together the way a burger does.
What is a serving size?
About 2 pepper rings. The servings are set at 6 so divide the number you get by 6.

It depends on how many rings you get from your peppers. Just divide the total number of rings by 6. Each person should get 2 or 3. The carb count is for 1/6th of the recipe.
