This Keto Greek Salad is loaded with delicious bites of chicken and homemade Greek salad dressing. It’s the perfect way to enjoy a flavorful meal without the worry of loading up on carbs. Pile on the vegetables and enjoy the fresh flavor and crunch of every single bite.

The great thing about making a salad for dinner is that it gives you options, and options are good. Salad is the perfect side dish or main dish, depending on what is on and in the salad. I think the more ingredients that add to a salad, the more towards the “dinner” category it is. This is why I LOVE making this classic Greek salad with Greek dressing because there are so many bursts of delicious flavor.

Even the kids agree that they love the taste as well. I think adding on the chicken breast completes the dish, but it could be optional if you just want to have the salad without any meat. You can also serve the chicken on the side as well and either choose to combine it or not.

Ingredients

Dressing:

Extra virgin olive oil – Use high-quality olive oil for the best flavor. Since extra-virgin olive oil is the largest ingredient of the dressing, don’t skimp. 

Lemon juice – The fresh lemon juice pairs perfectly with the oil giving the dressing a nice burst of citrus. 

Fresh oregano – There is such a difference in using fresh oregano! 

Garlic powder – I like using garlic powder in my dressing for adding garlic flavor. 

Salt & pepper for taste

Greek Salad:

Romaine lettuce – Romaine lettuce is such great lettuce to use. Some people will use iceberg lettuce, but I find more benefits to Romain. 

Sliced cucumbers – Thinly sliced cucumbers add a delicious crunch. 

Red onion – I like to use a thinly sliced red onion.

Grape tomatoes – Ripe grape tomatoes add sweetness. 

Kalamata olives – Using these types of olives is a must! 

Crumbled feta – The feta paired with the olive and veggies is perfection. 

Grilled chicken – I like using leftover chicken for this salad recipe as well. It’s an easy way to meal prep. You can also grill raw chicken breast.

How to Make Keto Greek Salad Dressing

Making homemade dressing for this low carb salad isn’t difficult at all!

Step One: Add the ingredients into a measuring cup.

Step Two: Whisk until combined well. Set aside until ready to use and pour on the salad.

How to Grill Chicken for Greek Salad (optional)

This step is optional but simple to do.

Step One: Season the chicken breasts.

Step Two: Place the cuts of chicken on the grill. Cook and flip halfway through. Once the internal temperature of the chicken breast has reached 165 degrees, remove it from the grill.

How to Make Keto Greek Salad

Now that everything is prepped and ready to go, it’s time to combine and enjoy.

Step One: Add all the ingredients (minus the dressing, feta cheese, and the chicken) to your plate.

Step Two: Once you have the lettuce in place, put the cut chicken breast on top, and then add the feta crumbled cheese. Sprinkle on some extra fresh oregano.

Step Three: Pour the mixed dressing all over the top of the salad. Enjoy!

Variations

Add more vegetables – Adding in other veggies like cauliflower, broccoli, bell peppers, and cherry tomatoes is never a bad idea! If you want more veggie options, add them.

Red wine vinegar – You can add a splash or two of red wine vinegar to the salad dressing as well.

Add some heat – If you want to add some spice to this keto Greek salad recipe, add some red pepper flakes right on top.

Mustard – To boost the flavor of the dressing feel free to add some dijon mustard.

Common Questions

How do you store this leftover Greek salad keto recipe?

The best way to store leftovers is in the fridge. Storing it covered in a bowl is fine, but you can also store leftovers in mason jars as well.

Can you change up the protein used in this gluten-free Greek salad?

If you want to use a different protein, beef or lamb will work well, too. Just be sure that you cook the choice all the way through before adding it to the top of the veggies and lettuce.

How long do you marinate the chicken breast?

To get the best flavor in the chicken before cooking, marinate it for at least 30 minutes – to 1 hour. You can let the marinade soak for longer, but that is totally up to you and your timeframe. You can double the Greek dressing in this recipe and use half of it as a marinade for the chicken. Discard the dressing that was used as a marinade.

What foods pair well with Greek salad?

This can be the main entree easily, or you can add a side dish of Dirty Cauliflower Rice or even pair it with a portion of Keto Enchilada Casserole. Options are good when it comes to low-carb recipes!

Greek Salad

  • 1 small head romaine lettuce
  • 1/4 cup sliced cucumbers
  • 1/4 cup sliced red onion
  • 1/4 cup halved grape tomatoes
  • 2 tbsp pitted kalamata olives
  • 1/4 cup crumbled feta

Grilled Chicken

Instructions

  • Combine the ingredients in a small blender and blend until well combined.

Grilled Chicken

  • Season the chicken with salt and pepper. Grill for about 4 minutes on each side or until 160 when checked with an internal thermometer. Cook time will vary based on the thickness of the chicken.

Salad

  • Layer the ingredients in a large bowl or on a large plate. Drizzle with the dressing.

Storage: Store any leftovers in the refrigerator. If you know you won't be consuming the whole salad only put the dressing on the portions you will eat immediately. 
Prep: This is great to meal prep for easy lunches. Just divide into containers and add the dressing right before serving.

  1. This is just a fabulous salad. I had everything on hand except the Feta. I had my daughter pick that up on her way over. She also grilled some fresh veggies eggplant, mushrooms and asparagus etc. We had left over dressing and drizzled it over them. Very nice indeed. This is my favorite site for great food.
