These Turkey Breakfast Sausage Patties are an easy, high-protein breakfast that’s full of savory flavor without all the extra grease. Made with lean ground turkey and simple pantry seasonings, they’re perfect for meal prep, breakfast sandwiches, or serving alongside eggs for a healthy start to the day.

Making homemade breakfast sausage is much easier than most people think. While traditional breakfast sausage is usually made with pork, I love using lean ground turkey instead. It keeps the patties lighter while still delivering plenty of classic breakfast sausage flavor.

I usually make a double batch so we have extras in the refrigerator or freezer for busy mornings. They’re one of my favorite grab-and-reheat breakfasts.

Before You Get Started

  • Mix the seasonings gently into the turkey without overworking the meat.
  • Slightly wet your hands before forming the patties to prevent sticking.
  • Press a small indentation into the center of each patty to help them cook evenly.
  • Use an instant-read thermometer instead of guessing when they’re done.

Ingredients

This recipe uses a homemade blend of spices you probably already have in your pantry. These make up my Breakfast Sausage Seasoning.

  • Ground turkey – I use 85% fat content. 
  • Dried onion – This adds a great flavor. 
  • Fresh sage – I love how this adds a savory flavor. You can use dried sage, too. 
  • Garlic powder – For an added garlic taste. 
  • Dried thyme – Another herb that stands out in this simple recipe. 
  • Black pepper – For flavor. 
  • Smoked paprika – Adds a nice smoky flavor to the homemade turkey breakfast sausage patties. 
  • Ground nutmeg – This is optional.
  • Crushed red pepper flakes – Adds a nice low heat and spice. Also optional. 
  • Maple syrup or brown sugar – Pairs well with the fresh herbs and adds a little sweetness. This is optional.

How to Make Turkey Breakfast Sausage Patties

Heat a large frying pan over medium-high heat.

Step One: Mix the raw meat with all the seasonings.

Step Two: Form into 8 sausage patties. If it is too sticky, wet your hands.

Step Three: Put the raw patties in the hot skillet and cook for 4-5 minutes per side, or until the internal temperature reaches 160°F.

Step Four: Once fully cooked, remove and serve.

Top Tip💡

Use a meat thermometer to check the temperature of the turkey. Turkey is much leaner than pork, so avoid overcooking it. Once the internal temperature shows 160 degrees, you can remove the patties from the skillet and serve. 

    Variations

    • Chicken Sausage – Substitute ground chicken.
    • Spicy Turkey Sausage Patties – Increase the crushed red pepper or add cayenne pepper.
    • Sweeter – Add a little maple syrup or brown sugar.
    • Different Seasonings – Try poultry seasoning, blackened seasoning, Greek seasoning, or your favorite breakfast sausage blend.

    Equipment

    To make your own sausage at home, you’ll need a large mixing bowl, a skillet, and a spatula. Measuring spoons and a meat thermometer also come in handy!

    Storage

    ​Any leftovers of this turkey sausage recipe need to be stored in an airtight container and kept in the fridge for up to 3 days.

    You can also freeze these homemade breakfast sausage patties by layering wax paper between them when stacked and storing them in a freezer bag for up to 3 months. 

    Reheat in the microwave, skillet, or air fryer until warmed through.

    Common Questions

    How should I serve turkey breakfast sausage?

    Serve them with eggs, pancakes, waffles, breakfast casseroles, breakfast sandwiches, English muffins, or breakfast burritos.

    Can I bake these instead of pan-frying?

    Yes. Bake at 400°F for about 18 to 22 minutes, flipping halfway through, until they reach 160°F internally.

    Can I freeze uncooked patties?

    Absolutely, freeze them in a single layer until firm, then transfer to a freezer bag with parchment between each patty.

    Can I make these ahead of time?

    You bet. If you want to make these turkey patties ahead of time, go for it. Just keep them stored or frozen properly until you are ready to reheat and eat. If you are storing them in the fridge, they should be eaten within a couple of days of being cooked.

    Why are my turkey patties dried out?

    This can happen if they were cooked too long or even reheated too long. Turkey is naturally lean, so overcooking is the most common cause. Remove the patties as soon as they reach 160°F. You can always use them in a gravy to help add some moisture back if this is the case!
