This Breakfast Sausage Seasoning is an easy homemade spice blend that helps to turn plain ground pork, turkey, chicken, or wild game into delicious breakfast sausage. Made with pantry spices like sage, thyme, garlic, and black pepper, it delivers classic breakfast sausage flavor in just minutes.

Making your own seasoning blend lets you control the ingredients, salt level, and sweetness while skipping preservatives found in many store-bought mixes. Whether you’re making sausage patties, loose breakfast sausage, or sausage gravy, this blend is one you’ll use again and again.

This seasoning works perfectly in my Almond Flour Biscuits and Gravy Recipe, Keto Sausage Stuffing Recipe, and Turkey Breakfast Sausage Patties. It’s also delicious mixed into ground pork, turkey, chicken, or wild game for homemade breakfast sausage.

Ingredients

  • Minced dried onion – I keep this in my cabinet at all times as I love adding it for extra flavor.
  • Kosher salt – Enhances the other flavors.
  • Fresh sage – Finely chop it before mixing. Dried rubbed sage also works, but use less since the flavor is more concentrated.
  • Garlic powder – For added garlic flavor.
  • Dried thyme – Complements the sage.
  • Black pepper – Adds mild heat.
  • Smoked paprika – Adds a nice smoky flavor. You can swap in regular paprika if necessary.
  • Ground nutmeg – Optional, but adds traditional breakfast sausage flavor.
  • Crushed red pepper flakes – Optional, for a little heat.
  • Brown sugar or sweetener – Optional, but gives a classic slightly sweet breakfast sausage flavor.

Top Tip💡

Mix the seasoning into the meat the night before and refrigerate it overnight. This gives the herbs and spices time to blend into the meat for even more flavorful breakfast sausage.

    Variations

    • Spicy Breakfast Sausage – Add extra crushed red pepper flakes or cayenne pepper.
    • Maple Breakfast Sausage – Add maple sugar or a drizzle of maple syrup to the meat mixture.
    • Herb-Forward Blend – Increase the sage and thyme for a more traditional country sausage flavor.
    • Sugar-Free Version – Simply omit the brown sugar.
