Chocolate for breakfast always feels like an over the top indulgence. But with this recipe for Chocolate Chocolate Chip Waffles feel free to indulge as much as you like.
I enjoyed eating these plain but they are great with whipped cream and raspberry jam as well. I love the combination of chocolate and raspberry. They can also we dessert waffles with a scoop of chocolate ice cream for the ultimate waffle sundae.
Be careful not to overfill the waffle iron with these. The batter spreads out a lot. I overflowed a few and had some nice drips I had to clean on the sides of the waffle iron and on the counter.
I have this Bella Flip Waffle Iron and love it. If you don't own a waffle make I recommend this one. Or you can always make this batter as pancakes. Just make them small so they don't break while slipping. I bet it would work as muffins as well. That is on my to try list.
Chocolate Chocolate Chip Waffles - Low Carb, Grain Gluten Sugar-Free, THM S
Ingredients:
6 eggs
1 cup cottage cheese
⅔ cup Trim Healthy Mama Baking Blend (or equal parts almond flour, coconut flour, and ground golden flax)
⅔ cup Trim Healthy Mama Gentle Sweet (or my sweetener)
½ cup cocoa
4 oz cream cheese, softened
1 teaspoon baking powder
1 teaspoon vanilla
6 tablespoon sugar-free chocolate chips
Instructions:
Preheat a waffle iron. Add all the ingredients to a blender. Blend until smooth, scraping down the sides as necessary. Grease the waffle iron. Pour about ½ - ¾ cup of batter onto the waffle iron (less if you are not using a Belgian waffle iron). Sprinkle on about ½ tablespoon chocolate chips.
Cook until deep brown. Your waffle iron’s ready light may turn on before this happens. Just ignore it. Gently loosen and remove the waffle. Repeat with the remaining batter.
Note: This batter will spread. I have had a few waffles overflow the waffle iron.
For an extra special treat fill these with ice cream for a waffle ice cream sandwich!

I made these today and, wow, what a great recipe! My waffle iron makes two squares side by side, about 4 inches sqsuare; it made 16 waffles! They are cooled and in a freezer bag ready for a quick breakfast or snack. I prefer mine with homemade peanut butter. Thanks for a great recipe!

I smear it on top. I make my own peanut butter with a little stevia added.
