This Arugula Burrata Salad is a perfect addition for dinner parties, a flavorful side dish to accompany any main meal, or a delicious choice for a simple summer salad. The texture of the creamy burrata cheese pairs wonderfully with the rest of the fresh ingredients.

I love making this burrata arugula salad when I want a light meal. It’s the perfect way to fuel my body, without compromising on flavor and taste. During the summer months, I love to pick up sweet summer tomatoes from the local farmers’ market because they’re just so good! 

The key to making this easy arugula burrata salad is to use fresh ripe ingredients. There’s nothing like fresh tomatoes and cucumbers, paired with the spicy flavor of arugula and the creamy texture of burrata cheese.

Ingredients

  • Arugula – I buy this washed and cleaned from the grocery store for easy prep.
  • Cherry tomatoes – Clean and halve them before adding.
  • Mini cucumbers – Slice them before adding them. 
  • Red onion – I prefer the sweetness of the red onion slices.
  • Burrata – This will be divided into six portions.
  • Extra virgin olive oil – This adds healthy fat to the dressing.
  • White balsamic vinegar – Pairs well with the olive oil and other salad ingredients.
  • Garlic clove – Remove the center of the clove for a milder flavor when using raw garlic.
  • Salt and black pepper – For flavor.

How to Make Arugula Burrata Salad

Step One: Add all the dressing ingredients into a food processor or blender.

Step Two: Blend until smooth. If any chunks of garlic remain, remove them.

Step Three: Add the arugula to a large bowl. Top with the sliced tomatoes, cucumbers, and red onions. Carefully place the burrata cheese on top of the salad.

Step Four: Drizzle with the homemade dressing and serve. 

Top Tip💡

If you think that it’s too much arugula flavor, you can always add a bit of baby spinach to balance the flavor. Both pair well with the tangy balsamic dressing! 

Substitutions

  • Ball of fresh mozzarella – While I love the creamy cheese listed on the recipe card, you may not be able to find it at grocery stores. In that case, swap it out for mozzarella cheese. It won’t have the same creamy center as fresh burrata cheese, but it’s a good secondary option. 

Variations

  • Toppings – If you love a good crunch on your salads, add some pine nuts, pumpkin seeds, or even some crunchy pistachios. A little bit goes a long way and can be a great textural addition. 
  • Herbs – Add a kick to the flavor with fresh mint or fresh basil leaves. 
  • Salad dressing – If you don’t want to make your own salad dressing, you can use any dressing of your choice. 
  • Fresh fruit – This burrata arugula salad pairs really well with juicy peaches or sliced strawberries.

To make this arugula burrata salad recipe, you only need a food processor or blender, a cutting board, a sharp knife, and a serving plate or bowl. 

Storage

For the best flavor and taste, I recommend making this perfect salad fresh. Simple salads like this are quick and easy ot make on a hot day, and you’ll get the best flavor and texture this way, too. 

You could make the dressing ahead of time. Just store it in a mason jar, and make sure that you give it a good shake before pouring over the bed of peppery arugula.

It has a nice, peppery flavor. A lot of people like it as a compliment and mix it into other salad recipes, but I love the way that it can stand on its own, too.

Is mozzarella cheese creamy like burrata cheese?

It’s not, but it’s a good alternative to use. There’s really nothing like the creaminess of burrata cheese – it’s one of a kind.

Can I make this salad with mixed greens instead?

Absolutely. Even if you’re not a huge fan of just having arugula, you can still make this yummy salad with other mixed greens. The dressing will still pair really well with the flavors of whatever lettuce or greens you choose.

  • 5 oz arugula
  • 1 cup cherry tomatoes halved
  • 1/2 English cucumber sliced
  • 1/2 small red onion sliced
  • 8 oz burrata divided into 6 portions

Dressing

  • 2 oz olive oil
