Is there anything better than a sweet, cinnamon-scented Snickerdoodle Latte on a cold morning? Making it at home in minutes with no special equipment! This easy recipe is low carb, keto, gluten-free, grain-free, sugar-free, and Trim Healthy Mama friendly.

I am a coffee girl. My kids know not to ask me any difficult questions in the morning before I have a cup in hand. In the summer I go for a cold brew but in the winter I like my cuppa hot, sweet, and creamy.

I love playing around with adding different flavors to my coffee. My favorite has become this Snickerdoodle inspired latte. I take the sweet flavor of a Snickerdoodle cookie and add that to my coffee. It is delicious! I use a sugar-free sweetener, cinnamon, and a single drop of molasses for a hint of brown sugar taste.

How to make a low carb latte?

True lattes are mostly hot milk with a shot or two of espresso. They aren’t the best option on a low carb or Trim Healthy Mama way of eating. By using brewed coffee and half and half (or heavy cream) you can mimic the latte flavor for a fraction of the carbs.

Is molasses keto friendly?

Yes, it can be. I don’t use molasses for sweetness. I use it for flavor. Using a drop or two of molasses adds about 1 gram of carbs to your latte. If you prefer you can omit it.

More Flavor Ideas

Some other flavor options would be adding peppermint extract for a peppermint latte. Top with some whipped cream and crushed sugar-free peppermint candies for a holiday treat. Or how about a maple pecan latte? Add maple extract, whipped cream, and a sprinkle of chopped pecans on top. Or maybe an apple crisp latte? Add apple extract and cinnamon. Yum!

  • Put 8 oz brewed coffee in a mug. Stir in sweetener, cinnamon, molasses, and half and half. Mix well. Enjoy!

Notes

*** I get a lot of comments from my low carb readers on the use of molasses. I use it for a brown sugar flavor, not sweetness. This recipe uses one drop of molasses which is about 1/4 tsp. This has less than 1 gram of carbs from the molasses. If you prefer you can just omit it.
Notes on Sweeteners: 
I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.

To sub in Swerve use 1.5 to 2 times the amount of sweetener called for.
 
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
 
Substitutions will work in most recipes. They may not work in candies, such as caramel.

  1. Have you posted the exact recipe for your sweetener that you always use? I haven’t made some of your wonderful recipes yet because I am having trouble deciding on the right keto sweetener to use.

  2. Just wondering if the 2 tablespoons of sweetener for only 8 oz of coffee is correct – it seems like a lot? Thank you.

    1. I made this several times testing different sweetnesses trying to get it similar to a coffee shop drink. If you think it would be too sweet for you just start with 1 tablespoon and taste.
