If an oatmeal cranberry cookie is your sweet treat of choice you must try my breakfast version! This cookie granola tastes just like your favorite dessert turned into a breakfast cereal!
This keeps really well in the fridge. Almost indefinitely. I found some in the back of the fridge about 6 months after making this and it was fine! It still tasted great. You can easily double or triple this recipe to make a big batch.
To make my cookie granola you can make cookie shapes before baking but you really don't have to. You can just spread the mixture on the cookie sheet.
It can be hard to find unsweetened dried cranberries but they are sold on Amazon or you can make your own with my sugar-free dried cranberries recipe. I also know someone who just washes regular sweetened dried cranberries to remove some of the sugar. I'm not sure how effective that is but if a little sugar is ok in your diet it might be a good option.

Ingredients
- 3 cups gluten-free oats
- 3 egg whites
- ¼ cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
- 1 tablespoon butter flavored coconut oil melted
- 1 teaspoon molasses
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- ⅔ cup sugar-free dried cranberries
Instructions
- Preheat oven to 350.
- Mix together all the ingredients (except the cranberries). Spread on a large cookie sheet. Bake for 10 minutes.
- Mix in the cranberries. Bake an additional 10-15 minutes or until golden brown.

Thank you for doing the sweetener conversions for us. I bake with different sweeteners depending on the recipe, or what I have on hand at the time. I do have a conversions chart, but this sure makes things easy.
