Healthy Oatmeal Cookie Granola
If an oatmeal cranberry cookie is your sweet treat of choice you must try my breakfast version! This cookie granola tastes just like your favorite dessert turned into a breakfast cereal!



This keeps really well in the fridge. Almost indefinitely. I found some in the back of the fridge about 6 months after making this and it was fine! It still tasted great. You can easily double or triple this recipe to make a big batch.

To make my cookie granola you can make cookie shapes before baking but you really don’t have to. You can just spread the mixture on the cookie sheet.

It can be hard to find unsweetened dried cranberries but they are sold on Amazon or you can make your own with my sugar-free dried cranberries recipe. I also know someone who just washes regular sweetened dried cranberries to remove some of the sugar. I’m not sure how effective that is but if a little sugar is ok in your diet it might be a good option.

Healthy Oatmeal Cookie Granola
Ingredients
- 3 cups gluten-free oats
- 3 egg whites
- 1/4 cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
- 1 tbsp butter flavored coconut oil melted
- 1 tsp molasses
- 1 tsp vanilla
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 2/3 cup sugar-free dried cranberries
Instructions
- Preheat oven to 350.
- Mix together all the ingredients (except the cranberries). Spread on a large cookie sheet. Bake for 10 minutes.
- Mix in the cranberries. Bake an additional 10-15 minutes or until golden brown.

Can raisins be substituted for the craisins and still be a THM E?
That is a great question. THM does not really recommend dried fruit but their recipe for Sweat Pants Oatmeal does have 10-12 raisins in 1 serving. So I do think you can sub raisins in this.
Thank you for doing the sweetener conversions for us. I bake with different sweeteners depending on the recipe, or what I have on hand at the time. I do have a conversions chart, but this sure makes things easy.
Looks really yummy! Is the baking soda necessary?
I based these on an oatmeal cookie recipe. You could probably omit it if you prefer.

Thank you for this amazing recipe! It’s fabulous!! I have a hard time not eating way more than a serving because it’s so good! I subbed a generous 1/2 cup erythritol/monkfruit sweetener, added a bit of extra cinnamon and about 1/4 tsp apple pie spice. Also, I left the tray in the turned-off oven overnight so it would be crispy. It’s perfect!
I love granola and this recipe is very yummy as well as super fast and easy to throw together.I can’t eat cranberries so I omitted them. I did however add chopped pecans and unsweetened coconut, because that’s what was in my favorite store bought sugar filled granola that I no longer eat. Thanks for all the great recipes!
this is not low carb. especially when using oats
Did you read this at all? I never said it was low carb. It is one of a handful of recipes on my blog that are for the Trim Healthy Mama diet. I’m sorry you are ‘disgruntled at the lie of this recipe’ but I never lied about it. Is there a sub for the egg white?
I haven’t tested this with an egg replacement. I think you could just omit it.
I love this recipe! I eat 1/2 cup with almond milk as a cereal and it is so filling and keeps me going until lunch. I had trouble with the consistency of warm oatmeal THM style but this is perfect for me! Thanks so much! This has really helped me keep on track with my lifestyle change!!
