We get tired of the same handful of recipes all the time, so we love to change it up with something different. This slow cooker pork tenderloin fits the bill, and the flavors in it rock our world. It has a subtle lemon-pepper flavor that’s not overpowering, but yet it’s still fresh and vibrant. 

I love being able to put food in my crockpot and know that in a few hours I will have dinner made. Yes, there are a few more steps than that, but they are so EASY you won’t even care. Cooking wholesome food for my family is so important to me, and I am sure it is for you too. Plus, it truly tastes so amazing!

How To Make Slow Cooker Pork Tenderloin

Step 1: Begin by putting the tenderloin in the slow cooker. Cover with garlic, olive oil, lemon juice, salt, and pepper, then mix.

Step 2: Cook in the slow cooker for 3-4 hours on low then remove pork once it reaches 155 degrees F. Remove the tenderloin and allow it to rest.

Step 3: While tenderloin is resting, mix the glucomannan with the liquid and whisk it off and on until it thickens into a gravy. Serve over pork tenderloin and enjoy!

What’s The Difference Between Pork Loin And Pork Tenderloin?

You will often hear the words pork loin and pork tenderloin interchanged, but they are actually different cuts of meat. One difference that stands out is the thickness of the pork. A tenderloin is going to be a long and typically pretty narrow cut of meat while a pork loin is wide and much thicker.

Pork loin has a flavor and texture of a really big pork chop. Additionally, pork loins have more fat, are lighter in color, and is lighter in color. 

Pork tenderloin is a super tender cut of meat, is leaner meat, and has a darker coloring. Tenderloins do tend to overcook rather quickly, so keep an eye on them. Otherwise, they won’t be juicy but dry and will lose flavor too.

Yes, this pork tenderloin crockpot recipe is very healthy. Pork tenderloin is lean meat, so it’s perfect if you are trying to watch what you eat. You will find that pork tenderloin is packed with protein, potassium, zinc, riboflavin, vitamin B6, phosphorus, and more. So, if you want to add some delicious protein to your diet, consider a pork tenderloin. 

Can Pork Tenderloin Be Shredded?

Yes, you can shred pork tenderloin if you want to. Simply shred it with a couple of forks or place it in your Kitchenaide mixer with the paddle attachment. It will shred the pork super fast. This is another fantastic option to shred the pork then cover it in the gravy you made. So delicious!

What Is Glucomannan?

Glucomannan is a dietary fiber that can also be used as a way to thicken foods and gravies. I use glucomannan in my slow cooker pork tenderloin to make the gravy nice and thick. If you don’t want to use glucomannan, that’s no problem. You can simply replace it with your favorite thickener.

How Do You Store Slow Cooker Pork Tenderloin?

Always store the cooked pork tenderloin in an airtight container. You can wrap it with plastic wrap or tin foil then add it to an airtight container. It will last around 3-4 days in the fridge. 

Storing the pork tenderloin in the freezer is another option that works well. Either slice the meat into individual servings or leave it as one big piece. Then wrap it with plastic wrap or aluminum foil then put in a freezer-safe bag or container. To defrost the meat, place it in the fridge the night before so it can thaw. 

To reheat the slow cooker pork tenderloin, you can either microwave it for a minute or so or bake it. If you bake it, heat the oven to 350 degrees F. and heat for 10-15 minutes until it’s hot all the way through.

  • Put the pork in the slow cooker. Add the garlic, lemon juice, olive oil, salt, and pepper. Give it a quick mix. Cover and cook on low 3-4 hours until the pork is 155 degrees. Remove from the crockpot and let it rest. While resting it will continue cooking to 160.
  • Sprinkle the glucomannan over the cooking liquid. Whisk it in. Turn the crock pot to high and whisk occasionally while the gravy thickens. When the gravy thickens slice the pork and serve.

  1. I just put it in the crockpot. Hope it is a forgiving recipe because I misread the recipe. So busy looking for the lemon pepper I know I have that forgot the olive oil. Thankfully when I read thru the recipe again to see if my fresh ground recipe would do, I spotted the olive oil. This is Sunday dinner for tomorrow so will transfer it to the fridge in four hours and reheat tomorrow. Serving it with zucchini from my garden and riced cauliflower. My son will then raid the freezer for the non keto desserts he keeps there. It’s a win win.

      1. corn starch also or arrowroot powder $12. bucks for glucomannan supplements pills is ALOT if you are only using it as a thickening agent.

      2. Those aren’t really keto friendly. I buy one thing of glucomannan powder every 3-4 years. You only use a small amount in each recipe so if you divide by cost per recipe it is negligible.
