Ingredients

  • Pecans – You’ll want these to be chopped, which you can do by hand or in a food processor. (or buy them that way to save time)
  • Flaked coconut – I use unsweetened to cut down on sugar.
  • Joy Filled Eats Sweetener – My go-to sweetener for easy recipes like this. There are alternatives listed on the recipe card.
  • Greek yogurt – This has more protein than plain yogurt. For keto, choose full-fat yogurt without added sugar.
  • Berries – Any fresh berries will work.
  • Granola – I use my healthy granola recipe for this, but you can also buy low carb granola from the grocery store.

See recipe card for quantities.

How to Make a Keto Yogurt Parfait

Preheat a large skillet over medium heat on the stove.

granola in frying pan

Step One: Add the chopped pecans and coconut flakes and stir for 5 minutes to toast them. Take the pan off the heat.

Step Two: Add the sweetener to the pan and stir until it melts. It should also coat the coconut and nuts.

Step Three: Pour the mixture onto parchment paper and let it cool.

Step Four: Spoon the yogurt into a glass or serving bowl. (I chose to make one big bowl and divide servings from that.)

Step Five: Top with the cooled granola mixture and fresh berries. Drizzle the top with keto honey or maple syrup, if desired.

Top Tip💡

You can use plain Greek yogurt, vanilla yogurt, or even other flavors of yogurt for this recipe. Most yogurt flavors pair well with the additional ingredients needed to make this keto parfait. Just make sure to choose yogurt without added sugar.

Substitutions

  • Coconut yogurt – You can easily use coconut yogurt for this Greek yogurt parfait. It’s the perfect substitute for a dairy-free option.
  • Pecans – This is my favorite type of nut, but you can swap them out for peanuts, macadamia nuts, cashews, or walnuts.

Variations

  • Toppings – While I love fresh berries, you can add other flavors as well. Drizzling a bit of peanut butter on top is a simple way to turn this into a high protein snack. You can also add flax seeds, chia seeds, or sugar-free chocolate chips.
  • Vanilla extract – Add a pop of vanilla flavoring by putting a bit of extract into the yogurt and stirring it.

Equipment

All you need to make this simple snack is a skillet, parchment paper, a heat-safe spatula, and a serving bowl or glass.

Storage

The great news about making this simple parfait recipe is that you can simply store it by putting it in the fridge. I like to add a plastic cover to the top of my glass or bowl, which keeps it from absorbing odors from other food items in the fridge.

I don’t recommend freezing this, as the texture of the yogurt once thawed won’t be the same. It’s best enjoyed fresh!

Common Questions

Is this meant to be a breakfast, snack, or dessert?

It’s whatever you want it to be. I make it when the craving strikes! Since it has a good amount of protein, it’s a great boost to start the day, but I also love that it curbs my sweet tooth at night. A recipe like this is just a good one to have for any time you want to make it.

Do I have to add a crunchy granola topping?

Nope – not at all. You can easily just add pecans by themselves, or even unsweetened coconut alone, too. Or skip the crunch altogether and load up with fresh fruit. All are good options – and totally up to you.
