How To Make Keto Broccoli Casserole
Will you ever get tired of finding recipes for easy food? I know I won’t, and this is another one to add to your list of simple dishes! Take a look:
First Step: Combine the minced onion, dried parsley, garlic powder, salt, and pepper together with the cream cheese, sour cream, mayonnaise, and half of the cheese.
Second Step: Gently fold in the steamed broccoli and spread into a casserole dish.
Third Step: Sprinkle on the rest of the cheese.
Fourth Step: Bake the keto broccoli casserole for 20 minutes. Enjoy!

Do I Have To Use Steamed Broccoli?
I find that this low carb broccoli casserole recipe cooks up perfectly when I use steamed broccoli. If you don’t steam it beforehand, it’s not going to soften up very well. This could mean that it’s going to be hard and not cook evenly as if it was steamed. So, I highly recommend steaming for the best results. You can do this on the stovetop, oven (see below!), or even by adding the broccoli to a bowl with little water and microwaving. It’s a pretty fast process, and the results are so much better.
How to Steam Broccoli in the Oven
This is my new favorite way to pre-cook fresh broccoli florets for a casserole. I add them to the baking dish I'm planning on using for the casserole, add about ½ an inch of water, cover it tightly with foil and bake until they are tender. This takes about 20-30 minutes at 350.
Can I Make This Keto Broccoli Casserole Ahead Of Time?
Yes, absolutely! That is one thing that I love about this broccoli casserole; you can easily prepare and cook it in advance and have it ready to eat whenever you need it. Sometimes I will make it a day in advance if we are taking it somewhere, and I am short on time.
After you bake the broccoli, let it cool all the way down, then cover and refrigerate for up to 5 days. It’s lovely for lunch or dinner!
What Are The Health Benefits Of Broccoli?
There are many, many health benefits of eating this easy broccoli casserole. Like previously mentioned, this is a terrific low carb side dish for a keto diet. But it’s also loaded with nutrients and antioxidants too. You will get good fats, probiotics from the sour cream, protein, zinc, vitamin A, vitamin C, fiber, folate, and so much more. I honestly can’t think of a single reason not to eat this on a regular basis.

- 2 lbs fresh broccoli steamed
- 1 tablespoon dried minced onion
- 1 tablespoon dried parsley
- ½ tablespoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
- 8 oz cream cheese softened
- 4 oz sour cream
- 4 oz mayo
- 8 oz shredded cheddar
Instructions
- Preheat the oven to 350. Spray a 9 x 13 baking dish with cooking spray.
- Mix seasonings with cream cheese, sour cream, mayo, and half the cheese.
- Fold in the broccoli. Spread in the prepared casserole dish. Top with the remaining cheese.
- Bake until hot, about 20 min.

it was tasty, but the broccoli came out too much - have 6 oz left . They didn't turned tender after 30 minutes in the oven . I added chicken breast and a little oregano. I remember that made it with 1 lb of broccoli and 1/2 pound of chicken breast in the crock pot and turned out perfect with the broccoli. If I decide to make it this way again I will stew the broccoli in the basket in the hot water in my cooking pan .
