Keto Broccoli Casserole is a delightful dish that is comforting and simple to make. It’s creamy, topped with cheese and filled with perfectly seasoned steamed broccoli. You can have this broccoli cheese casserole on your dinner table in under 30 minutes, and it’s incredible.

If you have ever had trouble getting your kids (and maybe even your spouse) on board with eating low carb, I have a deal for you! Guess what, if you cover something in cheese and it’s creamy, they are bound to eat it no matter what it is! My kids are used to eating veggies like broccoli, but occasionally we have to do some convincing. Well, I am excited to say that they are more than eager to chow down on a plate with this easy keto broccoli recipe. 

When eating keto, you probably have been in situations where you go to a friend or family member’s home to eat, and there aren’t a ton of options for you. I help combat this problem by bringing something like this keto broccoli casserole. Everyone loves it, and it helps me feel confident that I will have plenty of food to eat. Plus, my low carb broccoli cheese casserole recipe is tasty and filling enough I don’t even need to have anything else with it.

Ingredients

Cooked Broccoli – I prefer to steam fresh broccoli for this recipe but in a pinch, you can use frozen broccoli. Just cook it according to the directions and drain it well.

Cream Cheese, Sour Cream, & Mayo – This is the trio of creamy ingredients I use in all my casseroles. They easily replace canned cream of mushroom soup, cream of chicken soup, and similar.

Cheddar Cheese – Shredded cheddar cheese or a blend of sharp cheddar cheese and Monterey jack work well in this broccoli casserole.

Seasoning – I use a combination of dried minced onion (or onion powder), garlic powder, parsley, kosher salt, and black pepper.

How To Make Keto Broccoli Casserole

Will you ever get tired of finding recipes for easy food? I know I won’t, and this is another one to add to your list of simple dishes! Take a look:

First Step: Combine the minced onion, dried parsley, garlic powder, salt, and pepper together with the cream cheese, sour cream, mayonnaise, and half of the cheese in a large mixing bowl.

Second Step: Gently fold in the steamed broccoli and spread into a casserole dish.

Third Step: Sprinkle on the rest of the cheese.

Fourth Step: Bake the keto broccoli casserole for 20 minutes. Enjoy this easy comfort food side dish!

Variations

Protein – Add some protein to make this a one-dish meal. Cooked chicken, cubed ham, and leftover turkey work well.

Seasoning – Add dill for a ranch flavor or smoked paprika for a smoky flavor.

Cheese – Swap out the cheddar for your favorite cheese.

Topping – If you normally top your baked broccoli casserole with Ritz crackers try the combination of pork rinds and butter in this recipe instead.

Common Questions

Do I Have To Use Steamed Broccoli?

I find that this low carb broccoli casserole recipe cooks up perfectly when I use steamed broccoli. If you don’t steam it beforehand, it’s not going to soften up very well. This could mean that it’s going to be hard and not cook evenly as if it was steamed. So, I highly recommend steaming for the best results. You can do this on the stovetop, oven (see below!), or even by adding the broccoli to a bowl with little water and microwaving. It’s a pretty fast process, and the results are so much better. 

How to Steam Broccoli in the Oven

This is my new favorite way to pre-cook fresh broccoli florets for a casserole. I add them to the baking dish I’m planning on using for the casserole, add about 1/2 an inch of water, cover it tightly with foil and bake until they are tender. This takes about 20-30 minutes at 350.

How to Steam Broccoli in an Instant Pot

Add the rack to the bottom of the pot. Place broccoli on top of the rack. Add one cup of water. Turn the Instant Pot to manual high pressure and set it for 0 minutes. The broccoli will cook in the time it takes to come up to pressure. As soon as it beeps release the pressure manually.

Can I Make This Keto Broccoli Casserole Ahead Of Time?

Yes, absolutely! That is one thing that I love about this broccoli casserole; you can easily prepare and cook it in advance and have it ready to eat whenever you need it. Sometimes I will make it a day in advance if we are taking it somewhere, and I am short on time. 

After you bake the broccoli, let it cool all the way down, then cover and refrigerate for up to 5 days. It’s lovely for lunch or dinner! 

What Are The Health Benefits Of Broccoli?

There are many, many health benefits of eating this easy broccoli casserole. Like previously mentioned, this is a terrific low carb side dish for a keto diet. But it’s also loaded with nutrients and antioxidants too. You will get good fats, and probiotics from sour cream, protein, zinc, vitamin A, vitamin C, fiber, folate, and so much more. I honestly can’t think of a single reason not to eat these broccoli casserole recipes on a regular basis.

  • Preheat the oven to 350. Spray a 9 x 13 baking dish with cooking spray.
  • Mix seasonings with cream cheese, sour cream, mayo, and half the cheese.
  • Fold in the broccoli. Spread in the prepared casserole dish. Top with the remaining cheese.
  • Bake until hot, about 20 min.

Notes

Substitutions: You can swap the cheddar cheese for mozzarella or any other cheese that melts well. Cauliflower works well in place of or in addition to the broccoli. 
Additions: Feel free to add in some crumbled bacon, cooked chicken, cooked turkey, cauliflower rice, other steamed veggies, etc. This base cheese sauce is great on so many things!
Frozen Broccoli: In a pinch, you can sub in frozen broccoli. Cook according to the package and drain it well before adding it.
Prep Time: Steam the broccoli and put everything in the casserole dish. Set in the fridge until you are ready to bake.  
To Reheat: You quickly can reheat the leftovers in the microwave for 1 - 2 minutes or until hot. Another option is to warm it in the oven at 350 degrees for 10-15 minutes. Once heated through and the cheese has melted, you can serve. 
To Freeze: Either freeze the entire batch of broccoli casserole in a large freezer-safe container or in individual servings. It’s best to thaw the broccoli casserole in the fridge before warming up.

  4. it was tasty, but the broccoli came out too much – have 6 oz left . They didn’t turned tender after 30 minutes in the oven . I added chicken breast and a little oregano. I remember that made it with 1 lb of broccoli and 1/2 pound of chicken breast in the crock pot and turned out perfect with the broccoli. If I decide to make it this way again I will stew the broccoli in the basket in the hot water in my cooking pan .
