Cooking chicken breasts is a great way to feed the family. I love making this chicken breast dish because you can literally pair it with any side that you want. Every time I make this dish, I like to add some veggies or caramelized onions and mushrooms to pair with it because why not? This Italian herb chicken recipe is great any time of the year because it’s warm, delicious, and is an easy low carb comfort food recipe.

Since I’ve found that making easy chicken recipes is a great way to meal prep, you can easily make a large batch of chicken and then use it for leftovers or other meals throughout the week. If you shred up the chicken after it’s cooled, this is really great for making sandwiches, too!

Ingredients

Chicken Breasts – Use boneless, skinless chicken breasts that are prepped and ready.

Parmesan cheese – This adds great flavor and pairs well with Italian seasoning. Freshly grated parmesan cheese would be delicious, but you can buy it already grated.

Italian herbs – This can be a mixture of fresh basil, parsley, fresh rosemary, or even just a little bit of premade Italian seasoning as well. Any blend labeled Italian herb seasoning will work.

Salt – To taste. Since parmesan cheese can be a bit salty you can even omit it if you prefer.

Pepper – To taste. You can add as much or as little black pepper as you like.

Olive oil – Avocado oil and coconut oil could be used as well.

OPTIONAL: At this point, you can dip the chicken in a mixture of egg and cream so the cheese and herbs stick better.

Variations

Use different seasonings – You can easily use whatever you want. Garlic powder, thyme, oregano, or any other seasonings.

Top with citrus – A squeeze of lime juice or lemon juice on top would be so good on this simple chicken dish.

Cook in a cast-iron skillet – There’s something about the way that the chicken browns when it’s cooked in cast iron. And then you can serve the Italian herb chicken right on the cast iron skillet.

Cheese – Sprinkle with some extra parmesan cheese or top with another type of cheese like asiago or mozzarella.

Parmesan – This is a great base for chicken parm. Just top with sauce and cheese for the last 10 minutes of baking time.

Sauce – Serve with some Tomato and Mascarpone Sauce for an extra special meal.

Common Questions

Can you make this chicken recipe on the grill?

Yes, you can! You can make grilled chicken easily. Just add the seasoning, and cook it on the grill rather than on the stovetop.

Just be sure that you get the temperature steady on the grill before adding the chicken breasts. The grill will have more inconsistent heat, so you’ll have to pay closer attention to the cooking time.

How do you know when baked chicken is cooked all the way?

The easiest way to tell that the chicken is done cooking is to check the internal temperature. Using a meat thermometer, insert it into the meatiest part of the breast. If the temperature shows at least 165 degrees, the chicken is done baking and ready to remove.

Give the chicken a few minutes to “rest” once you take it out of the oven. This will allow the juices to remain inside the chicken and marinate more to keep it tender and moist.

If you cut the chicken too early, the juices will run out of the cooked chicken, and that is a waste!

What side dishes pair well with chicken?

Literally, anything pairs well with chicken! You can make Keto Green Beans, opt for a simple side salad, or whip up Keto Zucchini Fritters as well.

How do I store leftover chicken?

Be sure to let the chicken cool down all the way before adding the leftovers to an airtight storage container. You can store the chicken whole or cut it up into bite-sized pieces. You can also shred the chicken so that you can use it for shredded chicken sandwiches later.

If you want to freeze the chicken, just add it to a freezer-safe bag once it’s cooled down. You can easily meal prep with cooked chicken and fill your freezer full for the upcoming months.

Make sure when you’re reheating the chicken that you heat it thoroughly all the way through. It needs to be hot and warmed up entirely before eating.

Notes

Nutrition Facts: The nutrition facts are for one serving which is one piece of chicken. This is about 5 ounces if you use 3 large chicken breasts equally 2 pounds and cut them in half.
Egg Wash: The egg wash is optional. I’ve made this successfully with and without it. It does help the cheese bind to the chicken but for a simpler option you can skip it.

  1. Great chicken! I did the egg wash with milk. I added a tsp of garlic powder as listed in the variants. I used thighs since they’re easier to cook for me. The instructions were perfect for cooking thighs. Excellent dinner. Thank you for finally helping me to pan fry chicken well. The struggle has been real.5 stars

  2. Pretty bland. Also needed a binder of some sort to bind the cheese to the chicken. Cooking instructions had the chicken very raw. I ended up doing 400° for 20 minutes.2 stars

    1. Hi Audra, I’m sorry you didn’t like it. You may want to just bump up the added salt. A general rule of thumb is 1 tsp per pound of meat but many people complain that is too much sodium for them so I try to use less in my recipes. The size of chicken breasts can vary a lot so that was probably the discrepency in time. If they were thin after cutting in half browning and then finishing in the oven for 10-15 minutes should have been fine.
