My favorite ice cream flavor ever was Ben & Jerry's Apple Pie Ice Cream. Which was banished to the recipe graveyard years ago. It was a cinnamon ice cream with chunks of cooked apples and pieces of pie crust. It tasted like apple pie a la mode. I had to recreate that.
Apples vs Zucchini?
I have a recipe for (zucchini) cooked apples in my 'Apple' Pie Cookies. I didn't mind using zucchini but I could taste that is was zucchini and not apples. I have sensitive taste buds. My kids had no idea.
In this recipe, I kept the number of apples down so that this would be low carb and in the S range for my Trim Healthy Mama readers. If you prefer you can substitute cooked zucchini for the apples to make this a true S and lower the carbs further.
Ice Cream Ingredients:
1 ½ cups almond milk
1 ½ cups heavy cream
2 egg yolks ***
½ cup Trim Healthy Mama Gentle Sweet (or my sweetener blend)
1 tablespoon glycerin
2 teaspoon cinnamon
Apple Filling Ingredients:
2 apples, peeled and chopped
1 tablespoon butter
1 tablespoon Trim Healthy Mama Gentle Sweet (or my sweetener blend)
Pie Crust Ingredients:
⅔ cups almond flour
1 teaspoon coconut flour
1 tablespoon cold butter
1 teaspoon cold water
Instructions:
Preheat oven to 350.
Mix the ingredients for the pie crust until well incorporated either in a food processor or using a pastry cutter to cut in the butter. Press into the bottom of a pie plate of onto a baking sheet. Bake for 15-20 minutes or until golden. Cool completely. Break or chop into bite sized pieces.
Meanwhile, cook the apple in the butter until softened. Add the sweetener and mix well. Set aside to cool.
Combine ice cream ingredients in a blender and process until smooth. Churn in an ice cream machine according to the manufacturer's instructions.
Once the ice cream has finished churning fold in the cooked apple and pieces of pie crust. Freeze until firm.

Would the sugar also be subtracted from the carb count? Making this 2 net carbs?

No, you only subtract the fiber. This has 7 net carbs. You could omit the apples and use an apple flavoring oil to get that apple taste and reduce the carbs further.
