What do you do when it is too hot to turn on the oven and too hot to go outside and grill? Make low carb pizza in a skillet! This easy pizza recipe is low carb, keto, gluten-free, grain-free, sugar-free, and Trim Healthy Mama friendly.
Turning on the stovetop heats up my kitchen much less than turning on the oven so when I craving pizza on a 90+ degree day last week this Low Carb Pizza in a Skillet was my solution.
What type of dough for Skillet Pizza?
This pizza uses my version of the popular Fathead pizza crust. The first place I ever saw a mozzarella dough was on Up Late Anyway with her Cheese Danish. Those are amazing. With a few tweaks, I made this dough savory for pizza and have used it ever since.
Do you need a microwave for Fathead Dough?
Nope! In the past, I've melted the cheese in the microwave but since I was going to use a frying pan anyway I decided to melt the cheese that way. It worked very well. So now I can also tell anyone without a microwave that they don't actually need one for a mozzarella dough.
What should the cheese look like?
You want the cheese to be runny and gooey before proceeding to the next step.
Pizza Dough in the Food Processor
I like to mix this dough in the food processor because it comes together without all the elbow grease of mixing by hand. It can be difficult to thoroughly incorporate the melted cheese if you mix it by hand.

Cooking Pizza in a Skillet
I didn't even wash the frying pan. I just pressed the dough into the bottom of it and turned the heat back on low.
Crispy Crust Low Carb Pizza
You can see how it is starting to puff up. You want the bottom to be deep golden brown before you flip it. I suggest loosening the entire thing with a spatula before attempting to flip it. Otherwise, it may break.
What should the crust look like?
See the deep golden brown? My pizza cracked a little while flipping but that doesn't impact the flavor. This is more of a fork and knife pizza than a handheld slice.
What kind of sauce can I use?
Flip, top, cover and finish cooking. I used vodka sauce on this because I love the flavor of it and I had a jar open in the fridge. A marinara sauce without added sugar is also a good choice. Other options are alfredo sauce or pesto.
If you'd like a golden cheese crust you can pop this low carb pizza under the broiler for a couple of minutes to brown the cheese. I was feeling too hot to even turn on the broiler for 5 minutes.
Or you can use a mini pastry torch to brown the cheese. My husband bought one for fun and it comes in handy on recipes like this.

Love the pizza! I dislike the instruction to use a processor. Not everyone has one of those...
Taryn says
I talk about this in the blog post. You can mix by hand but it is hard to mix in the cheese thoroughly.
Pat says
Can you use a mixer instead?
Taryn says
Yes

This looks so amazing! 😍

Welll now, I did not see that coming! What a genious idea! Turns out great and is a good option on those days I want to avoid turning the oven on. WONDERFUL!!! Thank you for an amazing recipe = )

I love this...thank you so much.
I split it in 3 and bake it at 425 for 10 mins in 6" silicone oiled round pans. Or split in 6 and round out to 4" and cooking my "Dash" griddle for 2.5 mins flip and another 1 min.
Pat says
My kind of cooking! Thank you!
Kathy says
I dont have a food processor. So can i just knead the ingredients
Taryn says
Yes. Make sure the cheese is completely melted first.

Hi there,
It looks like you used a non stick skillet, we don't use coated pans for personal preference so I used my cast iron skillet which is decently 'primed' but it was a terrible mess.....the taste was there for sure - it was delicious - but I had to literally scrape it in pieces off my pan and transfer it to the oven. Just wanted to help others who may not realize like I did.
Taryn says
I'm sorry the cast iron didn't work! My skillet is hard anodized aluminum. It's not nonstick with a coating. Cast iron is more textured though so I can understand why it stuck.

I have yet to try with the pizza, but I use a piece of parchment paper in skillet for tortillas and they don’t stick...
Jennifer says
Can u make the crust ahead of time like a day earlier?
Taryn says
Maybe if you bake it in the oven. I don't think the skillet method would work to make it ahead of time.
Michelle Petty says
U can make the dough ahead of time. Actually I find my fatheat flatbread turn out better if refrigerated overnight
Nikki says
Do you make the dough then refrigerate it, or bake/cook it then refrigerate the crust?
Angi says
Have you ever made this using all almond flour? I am leery of using coconut flour as I tried it once and didn't care for the taste.
Taryn says
I haven't but you can! You'll just need a little extra since coconut flour is drier.
Jenn says
Hi, would love to try this but a little confused. The comments reference flax, but I don't see that in the ingredient list. Also you have noted rhat a serving is 4 slices, but in comments state this makes 2 servings. Can you please clarify what you are providing the nutrition info for? Is that 391 cal/29 fat/10 carb/22 pro for the entire pizza or half? Thanks so much
Taryn says
The nutrition facts are per slice. This is very rich. I normally eat half of it with a side salad.
As far as the flax I used to have this as 1/4 cup each coconut flour, almond flour, and ground golden flax. Since then I've modified the recipe. If you'd like to use the flax version it works great but I just prefer the taste of more almond flour in this.
Nikki says
I just put a circle of cheese on my grill, either sprinkle garlic or onion powder (or use real thing - carmelized onion though) and then sprinkle on some basil and add meat if you want. That's it. The skillet browns the cheese and you just cut it and can pick it up. I can't eat tomatoes, so I skip that.
Gary says
OK. But did you try the recipe?
This skillet pizza recipe is great!
Jennifer says
Is this fresh mozzarella or like kraft shredded?
Taryn says
Not fresh. You can use bagged shredded mozzarella or a block cut into cubes for the dough. I just use whichever brand is on sale, sargento, polly-o, etc.
Jennifer says
Is this a personal pizza for one person or is a serving for 2?
Taryn says
This serves two.
Emily says
Your recipe says, "1/4 ground golden flax." What is the unit of measurement? Tablespoon? Cup?
Taryn says
1/4 cup
Rebecca Dunnells says
This recipe is the bomb! My first attempt was great. I substituted dairy with soy cheese and imitation cream cheese. Everything came together just as illustrated. Totally, yummy and so easy to make. Will be making this again, playing with seasonings and toppings. Thanks so much, Taryn!
Debbie says
Very easy to make and tasty. Love this quick recipe. Thx!!
Susan says
You said "jar" of vodka sauce... do you mind sharing which brand you use and where you purchase it? Thanks a bunch! 🙂
Taryn says
I used Classico. I think I purchased it at Shoprite which is a regional grocery store but it is sold in most stores.
Lee Hagins says
It says 1/4 ground golden flax--is it 1/4 CUP?
Taryn says
Yes, sorry about that! I'll edit the post asap.
Amber says
Can I use THM baking blend instead of all the flours?
Taryn says
Yes. Use a little bit less.
M. White says
If I use all coconut flour do I need to add another egg? My daughter can't have almond flour.
Taryn says
Yes. Try my coconut flour pizza crust.
