Making homemade ice cream into a high-protein dessert is a great option! This recipe still has that creamy consistency, even when using cottage cheese as the main ingredient. Trust me when I say that you won’t find a high protein treat like this at grocery stores.

Treat your sweet tooth to a simple ice cream that doesn’t come with tons of guilt. Forget about typical ice cream, and give this recipe a try! While you do need an ice cream maker to make this, the added simple ingredients make it a breeze.

Ingredients

  • Cottage cheese – I prefer full-fat cottage cheese. But you can use low fat cottage cheese if you prefer. 
  • Strawberries – Fresh strawberries or frozen strawberries work fine for this high protein dessert. 
  • Heavy cream – Adding this helps the dish taste like the real thing. 
  • Egg yolks – If you are concerned about using raw egg yolks you can purchase pasteurized eggs or you can temper the ice cream base.
  • Joy Filled Eats Sweetener – This is my go-to sweetener. There are alternatives in the recipe card below.
  • Glycerin – Helps to keep the texture of the ice cream soft enough to scoop.

How to Make Strawberry Cottage Cheese Ice Cream

Step One: Add all the ingredients to a blender.

Step Two: Blend until smooth. This may take a minute or two.

Step Three: Pour the mixture into an ice cream machine.

Step Four: Freeze according to the manufacturer’s directions. At this point it is like soft serve.

Step Five: You can eat it now or transfer it to a freezer safe container to firm up.

Top Tip💡

Even if you’re not a fan of cottage cheese, you’ll like this dish! It has the perfect texture and doesn’t taste like cottage cheese at all. The sweet flavor of the strawberries is what you’ll notice the most! 

Substitutions

  • Fresh fruit – You can change the natural sweetness of how this cottage cheese ice cream tastes by using other types of fruit. Blueberries, blackberries, raspberries – all great choices! 

Variations

  • Peanut butter – A scoop of peanut butter is an easy way to add even more protein to this dish. 
  • Toppings – Whipped cream, chocolate sauce, fresh sliced berries, the possibilities are endless. You can add other flavor combinations by adding various toppings as well. Put your own spin on your bowl of goodness and do a taste test to decide. You can also use this ice cream as a topping on Cottage Cheese Crepes!

Equipment

You’ll need a freezer-safe container, a high-powdered blender or food processor, and an ice cream maker to get that creamy texture. 

Storage

Make sure that you store this viral cottage cheese ice cream recipe in a freezer-safe airtight container. It needs to be airtight so that no ice crystals form on it.

Why is my ice cream not creamy? 

You need to be sure that you are blending all the well so that they are rich and creamy. There should be no chunks at all. This is a priority in making this dessert. Then, be sure that you are following the directions for the ice cream machine as they are written. The time that the ingredients spend in the machine is what creates the perfect final dessert. 

What are good ice cream toppings?

Have fun with this one! Sprinkles, shredded coconut, and chocolate chips – all great topping ideas. Just know that anything that you add to your bowl will increase the calories and carbs.

Another great option for adding even more protein is to add high-protein keto granola to this dish! There are a lot of options that you can use to enhance the flavor or keep it simple. Ice cream toppings add a bunch of flavor varieties – and I’m here for it!

  • Pour into an ice cream machine and freeze according to the manufacturer’s instructions.

Notes

***If you are concerned about using raw egg yolks you can purchase pasteurized eggs or you can temper the ice cream base.
If you don’t have an ice cream machine freeze this into popsicles instead.
Notes on Sweeteners: 
I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.
To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for. 
 
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
 
Substitutions will work in most recipes. They may not work in candies, such as caramel.
