Maple Ice Cream with Candied Walnuts. This takes the classic Maple Walnut Ice Cream to a whole new level. It is rich and creamy with the sweet crunch of the candied nuts.
I love the flavor of maple. Real maple syrup is one of the things I'm looking forward to indulging in once I reach my goal weight. Unfortunately, it's not too conducive to weight loss. And since I just had a baby two months ago I have more pounds to lose than I did a year ago.
Is Maple Syrup Low Carb?
Nope. But, fortunately, you can still have that maple flavor with a maple extract. It is a decent substitute when I'm craving that maple flavor. Growing up in the northeast and then honeymooning in Canada deepened that maple love even further. I wanted to take the traditional maple walnut ice cream and give it an upgrade by candying the walnuts. If you prefer pecans, almonds, cashews, or even macadamia nuts give them a try in this recipe.
How to Make Candied Walnuts
Making sugar-free candies nuts is very easy. Just cook down sweetener with butter and add the nuts.
One of the hard parts of this recipe is not eating the keto candied walnuts before they even make it into the ice cream!
Candied Walnut Ingredients:
butter
Trim Healthy Mama Gentle Sweet (or my sweetener blend)
walnut halves, coarsely chopped
How to Make Maple Ice Cream
I keep my ice cream recipes simple. Just a whirl in the blender of the necessary ingredients and then churn in the ice cream machine.
Maple Ice Cream Ingredients:
heavy cream
unsweetened almond milk
egg yolks ***
Trim Healthy Mama Gentle Sweet (or my sweetener blend)
maple extract
glycerin
*** If you are concerned about using raw egg yolks you can purchase pasteurized eggs or you can temper the ice cream base.

Candied Walnut Ingredients:
- 1 tablespoon butter
- ¼ cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
- 1 cup walnut halves coarsely chopped
Maple Ice Cream Ingredients:
- 1 ½ cups heavy cream
- 1 ½ cups unsweetened almond milk
- 3 egg yolks ***
- ½ cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
- 2 teaspoon maple extract
- 2 teaspoon glycerin
Instructions
- Add the butter and sweetener to a medium saucepan. Heat on medium until melted. Add the walnuts and cook for about 5-8 minutes until the syrup begins turning brown and the nuts smell toasted. Remove from the heat. Stir every 5 minutes as they cool. The syrup will continue to thicken. Once they are well coated and room temperature transfer to a waxed paper lined baking sheet. Refrigerate until the coating is hard.
- Meanwhile, put all the ice cream ingredients in a blender. Blend until smooth. Pour into an ice cream machine and freeze according to the manufacturer’s instructions. When the ice cream has finished churning gently stir in the candied walnuts. Freeze until firm.

Is there a way to make the ice cream if you don’t have an ice cream maker?

You can make it into popsicles. If you just freeze it in a container it will be way too hard to scoop. An ice cream maker incorporates air as the ice cream slowly freezes.

Hi! What can I use in place of the glycerine? Or can I skip it altogether?

You can sub in vodka. If you omit the glycerin you will need to let the ice cream temper longer in order for it to be scoopable. Probably 30 minutes at room temperature.

Would this work if dairy cream was subbed for coconut cream? To get dairy-free version? And would coconut cream need to be whipped or blended first to be liquid instead of a chunky solid to work better in recipe?

I have 2 dairy free ice creams. I'd suggest starting with the quantities in one of those and swapping out flavors.

This ice cream is amazing! So, so good and also very easy to make! I didn’t glaze the walnuts and just threw Diced walnuts in at the end and it was delicious.

I love this stuff! So easy, and as good, or better than store bought. I use our farm fresh eggs and an erythritol/monk mix. The candied walnuts are so delicious, thank you for this recipe!

Looks good, but what's the texture like? Looks a bit gritty and does it taste sweet?

If you want to avoid any gritiness grind your sweetener to a powder. And using low carb milk instead of almond milk helps with that too. This is about as sweet as a store bought ice cream. Ice creams are very forgiving, you can adjust the sweetener to your taste without messing up the recipe.
