Keto Candied Walnuts are the perfect sweet snack. With just two simple ingredients, this crunchy candied treat is one of the best. A simple holiday dish or a great way to curb those dessert cravings with a low carb option.

I’m a snacker. I love to have a good snack that is not only delicious but one that will fill me up, too. Empty calories full of carbs are a no-no this time of year, so this is why these keto candied pecans are one of my favorite snacks. Not only are they crazy easy to make, but they’re good to enjoy in several different ways.

While you can totally eat them by themselves, they’re also really great to put on top of salads and side dishes and even mix with some dried fruit to make a holiday trail mix as well. (You can even make this Maple Ice Cream with Candied Walnuts as well!)

Ingredients

Walnuts – Raw walnuts that are out of the shell can be bought at the store.

Joy Filled Eats Sweetener – This is my favorite go-to sweetener when I’m baking or making sweet treats. It is a blend of xylitol (or allulose) along with erythritol and stevia.

How to make Keto Candied Walnuts

Step One: Put the walnuts on a baking sheet and roast them for 7-8 minutes at 400 degrees. They should turn golden brown and fragrant.

Step Two: Put the sweetener into a saucepan and melt. You don’t have to add any liquid.

Step Three: Once it’s melted, toss the nuts in the sweetener and then spread it out on parchment paper. Let the nuts cool for at least 15 minutes, stirring every once in a while. The melted sweetener will harden as it cools.

Variations

Use another nut – The best thing about this keto-friendly recipe is that you can change up the flavors. Adding pecans, peanuts, almonds, or other types of nuts is a fast and simple way to make something new. You can even mix and match and have different nuts combined. Have a sweet and salty mixture – Add a pinch of salt to the sweetener for an addictive salt and sweet flavor. Keto candied nuts that are sweet with a hint of salt are so good!

Add other spices – A dash of cinnamon adds nothing to the net carbs but easily adds a huge amount of flavor.

Add extract – You can add a little bit of flavor easily to this gluten free snack by mixing in some vanilla extract. Caramel extract is another great choice imparting a caramel flavor.

Brown sugar sweetener – For a warm molasses flavor sub in your favorite brown sugar substitute.

Common Questions

What is the best way to roast walnuts?

No matter if you’re roasting walnuts, whole pecans, almonds, or any other nut, make sure that you’re adding them in a single layer to the baking tray. Cooking them in the oven is a great and simple way to roast them, but they can’t be stacked on top of each other, or they won’t roast evenly.

You shouldn’t have to stir them while they’re roasting as long as they’re not crowded. If you’re worried that they’re burning or browning too quickly, you can stir them using a spatula.

Can I Melt Sweetener with Nothing Added?

Yes. See the photo below as evidence! I added nothing besides the sweetener to my pot, which melted perfectly. Just be sure that you’re standing and stirring when it’s on the stovetop so that it doesn’t burn. Low and slow work great.

How do I store candied nuts?

Just follow the instructions to make this snack, and then you can store the leftovers in an airtight container at room temperature.

If you want to keep them in the fridge, you can also do so. The key is keeping them airtight so that they don’t get stale or soft.

To freeze these candied nuts, let them cool down completely after being roasted, and then store them in a freezer-safe bag. As long as you keep them sealed in the freezer, they should be good. You can use them while they’re frozen for a snack or a topping, or move them to the fridge to thaw and enjoy.

How can I use candied nuts?

Since this recipe tastes so good that you can easily add it to so many recipes! Use it as a topping for keto ice cream, use in a keto yogurt parfait, or use it as an extra protein boost for breakfast.

  • Meanwhile, melt the sweetener in a small saucepan. You do not need to add liquid.
  • Toss the nuts in the melted sweetener. Spread on parchment paper. Let cool for at least 15 minutes stirring occasionally. The sweetener will harden.

Notes

Notes on Sweeteners: 
I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.
To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for.  
 
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
 
Substitutions will work in most recipes. They may not work in candies, such as caramel.

  1. These were really yummy. I used a mix of pecans and walnuts and I used the Monk Fruit brown sugar. But, I thought it might need a little bit of butter and I melted some unsaled butter with the sweetener. I should have followed your recipe as is, because even though they tasted great, they were a little greasy. Next time I’ll do what you said and just use the sweetener. Roasting the nuts brings out their natural oils, so that’s probably why they didn’t need the butter. I’m going to use the leftover ones in some banana bread and see how that goes. Thank you for another great recipe. I spend a lot of time going through your recipes, because I always find a few more I want to print and try.5 stars
