Low carb waffles are a lovely way to get your sweet fix without actually eating a bunch of refined sugar. That is a win in my world. Plus, the kids will gobble them up and have no reservations that they are low carb.
Nothing says weekend to me more than a golden waffle dripping with butter and syrup. I love to make a big batch of keto waffles and then refrigerate some to pop in the toaster on busy mornings.
If you are hosting a large breakfast or brunch, you should for sure, add these keto waffles to the menu. They are perfect for hitting all sorts of dietary needs like keto, gluten-free, and grain-free. You could even set it up buffet style with all kinds of toppings too.
How To Make Low Carb Waffles
Waffles, in general, are pretty easy to make. I have found using a blender whips the batter up perfectly for an even more simple solution. Let’s get started so you can dig into a fluffy stack of keto waffles soon:
First Step: Heat up your waffle iron.
Second Step: Add the almonds and sweetener into your blender. Blend until they are ground up fine and then add the cottage cheese, almond milk, eggs, baking powder, and almond extract. Blend until the ingredients are smooth and incorporated.
Third Step: Add a spray or two of cooking spray to your waffle iron. Then add ¼ of the waffle batter to the waffle iron. Cook until they are golden brown.
Fourth Step: For extra crispy waffles, after they have cooled down, toast them in your toaster.
Serve with your favorite toppings and enjoy!
Expert Tips For Making Low Carb Waffles
I am in love with these keto waffles just the way I am sharing the recipe. However, once in a while, we will add in some extra ingredients or whatever depending on how we feel. I wanted to share some tips and suggestions on extra ingredients for you. Take a look:
- Don’t overmix the batter. It will cause the waffles to be much denser and not as fluffy. Overmixing causes a bunch of air bubbles to develop in the batter, and when they get hot, they pop and leave you with a more dense waffle.
- Do not pour the waffle batter into the waffle iron until it’s hot. Otherwise, your first waffle probably won’t turn out because it will start cooking at a lower temp, and then it will end up more like a tough and unappealing waffle.
- You can add extra ingredients if you want. Just blend the batter then gently fold in ¼ -½ cup of your favorite add-ins: sugar-free chocolate chips, blueberries, nuts, or anything you enjoy. You can also add in banana extract, caramel extract, or cinnamon to the batter to change the flavor a little bit.
How to make Keto Waffles Crispy
Waffles made with alternative flours tend to be on the softer side. I prefer crisp waffles. After a little experimenting, I've realized the best way to get a crisp waffle with alternative flour is to cook it in the waffle iron, let it cool, and then pop it in the toaster. These are so big I divide into 4 pieces and just put one piece in each side of my toaster. I'm fine with just 2 or 3 of the triangles for breakfast. They are very filling.
Low Carb Waffle Topping Ideas
Obviously, many people use keto pancake syrup for the topping for waffles, and it makes total sense. I use the monk fruit syrup I mentioned, but sometimes we will add some fun toppings too. Here are a few ideas to try out:
- Strawberries - Slice up a few berries or dice them up small. Then add them on top. If you haven’t tried strawberries on waffles yet, you really should. They are heavenly.
- Blueberries - Not only do the blueberries add some yummy flavor, but they also give the stack of waffles extra color too. It’s truly impossible not to devour them with that hint of fruit.
- Sugar-Free Chocolate - Add just a little bit of chocolate chips when you have a craving. It’s a great way to add some flavor and give you a chocolate fix at the same time.
- Nut Butter - Use your favorite nut butter and spread on top of the waffles. Drizzle with syrup and fall in love.
- Raspberries - Don’t go too crazy, but a few raspberries are terrific on these waffles. The give you some natural sweetness and look positively gorgeous on top!
- Homemade Whipped Cream - Whip up some heavy cream and keto sweetener together and add a dollop or two on top. It’s creamy and delicious.
- Nuts - Any kind of nuts would work great! Pecans, walnuts, hazelnuts, or almonds would be great. They give you a nice crunch and add some flavor. You could even add some of my candied pecans on top for extra fun!
- Keto Cheesecake Fluff - this light and fluffy cheesecake mousse is amazing on top of these waffles!
Which waffle iron should I buy?
You really can use any waffle maker.
Depending on the size of your waffle iron you may only get 3 Belgian size waffles or 6-8 smaller ones. I just got my 9-year-old this mini pink waffle maker for her birthday. It makes Eggo sized waffles. She can use it all by herself and it's just really cute! I couldn't resist when I saw it on sale.
Can I freeze Low Carb Waffles?
These waffles freeze well! Make a big batch, freeze some, and then just pop them in the toaster whenever you want one. They are so filling that sometimes I'll just eat ½ of a waffle with some yogurt and berries or on the side with eggs and bacon.
What syrup can I use for keto?
I topped these with Lakanto Monkfruit Syrup. Yum!

Ingredients
- 2 cups blanched slivered almonds or 2 cups almond flour
- ¼ cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
- ½ cup cottage cheese
- ½ cup almond milk
- 4 eggs
- 1 teaspoon baking powder
- 1 teaspoon almond extract
Instructions
- Preheat your waffle iron according to manufacturer's instructions.
- Put the almonds and sweetener in the blender and blend until finely ground. Add the other ingredients and blend until smooth.
- Spray the waffle iron with cooking spray. Pour about ¼ of the batter into the waffle iron. If you have a smaller waffle iron you will use less batter. Just pour enough to cover ¾ of the bottom grill. Cook until golden brown.
- To make crisper waffles let the waffles cool and then toast in the toaster.

Thank you, thank you, thank you! Finally an easy and DELICIOUS low carb waffle recipe! I have literally tried them all and non can compare. Using the blender incorporates enough air so they are light and fluffy. I used 2 cups of almond flour but basically kept the other ingredients the same. The only change I made was to separate my eggs, whip my egg whites and then fold them I innto the final product before cooking. I have never had anything without wheat flour taste so much like it had wheat flour!!! This will definitely help make my new low carb lifestyle successful.

I fudged with the recipe a bit only because I was cooking for one, myself, and I didn’t want such a large portion. Things I changed: 1 cup of almond flour, 1/2 cup of cream cheese, 2 eggs, 1tbsp white lakanto monk fruit, 1tbsp brown lakanto monk fruit, 1 tsp baking powder, 1 tsp vanilla extract, coated waffle iron w/ kerrygold butter. They came out delicious!!!

These waffles are great. Very similar in taste and texture to a regular carby waffle. At first I thought they were kinda dry but then I realized I forgot to add the almond milk! Doh! I will add next time and they will be perfect. I also added a couple pinches of salt to my batter.

You would need twice as much. I haven't tested it so I can't promise they will turn out but hypothetically I think coconut sugar should work.

I have not tried with almond flour yet. I would start with 1 cup and then check the consistency. It should be thick but pourable. Just add 1/4 at a time until it seems right. It's much easier to add a little more almond flour then to increase the liquids.

I used ground almond flour (Bobs Red Mill) and measures the two cups and it was perfect. These waffles are fabulous and will be a staple in Our house. The difficulty I am having is in the serving size. I used a regular waffle iron and got 12 waffles. I only eat two at a time but wonder what the nutritional facts are for that.
