I’ve been wanting to do sausage balls for a while and I had a friend coming for lunch this past Monday so I ordered my ingredients and whipped up these sausage balls to share with her. That grocery delivery is definitely a modern-day convenience that I do not take for granted.
How to Make Keto Sausage Balls
Sausage balls are very easy to make because you make them with raw sausage. It saves the step of having to brown the sausage first.
Expert Tip: One of my tips for making sausage balls or meatballs is to scoop them with a cookie scoop. If you don’t mind the bottom edge being flat you can just scoop and bake.
Mix together the sausage, cheeses, egg, onion, and garlic.
If the sausage you use comes in casings remove it from the casing first.
Form into balls and place on a baking sheet. It is faster and easier to do this with a cookie scoop than forming the balls by hand. I also line my baking sheet with parchment paper to make clean up easier.
Bake the keto sausage balls until golden brown and 160 degrees when checked with a meat thermometer.
Do I have to use spinach?
No, you can sub in broccoli florets or kale or leave out the veggies entirely.
Sausage balls without Bisquick
The most popular recipes for sausage balls use Bisquick. Not a low carb ingredient at all. But it is easy to make them without Bisquick. To make my sausage balls low carb I use grated parmesan cheese and an egg to help absorb the liquid the sausage gives off when cooking. With this combination, you also don’t need almond flour or coconut flour.
What to serve with sausage bites
I serve these with a no sugar added marinara sauce or vodka sauce since they have a bit of Italian flair. They would also be great in any recipe that calls for meatballs. I use a combination of sausage and ground turkey with shredded zucchini in my Meatball Casserole.
- 1 lb sausage (casings removed)
- 1/2 cup mozzarella cheese
- 1/2 cup parmesan cheese
- 1 cup spinach
- 1 egg
- 1/2 onion finely chopped
- 2 cloves garlic finely chopped
- 1 tsp salt
- Preheat oven to 400. Line a large rimmed cookie sheet with parchment paper.
- Mix together all the ingredients. Form into balls and place on the cookie sheet.
- Bake for 18-20 minutes until golden brown and cooked through. They should reach 160 on a meat thermometer.
