This Keto Cheeseburger Soup recipe is the perfect hearty soup. Tender ground beef paired with bacon and cheese creates a delicious flavor that the whole family will love.

Anytime I can create a low carb soup recipe that doesn’t actually taste low in carbs, I’m 100% excited for that recipe. It’s not every day that keto recipes come along that are not only perfect for the keto journey but are also just what you need for a chilly night. You can’t beat having the flavors of a cheeseburger in a comforting soup that makes meal prep a breeze. 

With only 3.6 net carbs per serving, you can enjoy keto bacon cheeseburger soup any time you want.

I’ve made this for busy weeknights, and everyone in the house always asks for seconds of this low carb cheeseburger soup. I’m a big fan of soup, and this is seriously one of my favorite foods!

Ingredients

  • Onion – You can use white onions, red onions, or purple onions for this simple recipe. 
  • Ground beef  – You can also use ground turkey or even ground chicken if you don’t want to add beef. 
  • Chicken broth – This helps to keep the soup thin. You can also add beef stock or vegetable broth. 
  • Heavy cream – Using cream helps to add creaminess to the soup base. 
  • Cream cheese – This creates a creamy texture. 
  • Shredded cheddar – Pick your favorite type of shredded cheese, and add. We normally use cheddar cheese or a colby jack blend.
  • Crumbled bacon – You can cook the bacon and add it, or buy it already made at the store. Just make sure to purchase bacon crumbles that are 100% bacon without added fillers.
  • Salt – For flavor. The salt will enhance all the other flavors.
  • Black Pepper – For taste. You can add as much or as little as you like.

How To Make Keto Cheeseburger Soup

Step One: Put the oil in a large pot and heat over medium heat. 

👉 Tip: If you cook some fresh, crispy bacon for this recipe, go ahead and use the bacon grease to cook the onions.

Step Two: Add the onion and cook for 3-4 minutes, until soft.

Step Three: Add the ground meat and cook until browned. Make sure to break it into small pieces and cook all the way through, which should take about 7-8 minutes.

Step Four: Add the chicken stock or beef broth and simmer.

Step Five: Stir in the cream cheese until it is melted. It is helpful to break it into small pieces with a wooden spoon as it melts.

Step Six: Turn the stove heat to low and then add the rest of the ingredients. Season to taste if needed.

Step Seven: Serve the completed keto cheeseburger soup recipe with your favorite burger toppings.

Storage

Store leftovers in an airtight container and keep them in the fridge. Be sure to let the soup cool down all the way, and then eat any leftovers within 2-3 days. 

To reheat the leftover soup, add a portion to the stovetop in a small pan and heat or medium-low heat, or use the microwave for a quick reheat. Don’t forget to add the toppings once the soup is hot! 

I normally don’t recommend freezing creamy soups because of the cream cheese base. Dairy products don’t tend to freeze the best, so it’s normally suggested to enjoy decadent cream-based soup while it’s fresh.

However, this particular soup tends to freeze really well! I think the ratio of dairy to broth is the reason this can be frozen. Cool completely and then store in the freezer.

Variations 

  • Change the type of meat – You can add browned beef or even browned turkey to this simple low carb cheeseburger soup. 
  • Cheese – Vary the flavor by the type of cheese. Try sharp cheddar cheese or monterey jack. Pepper jack adds a bit of heat.
  • Add other flavors – Adding garlic powder, onion powder, red pepper flakes, or even some cayenne pepper can easily change the flavor of this simple keto soup recipe. 
  • ​Vegetables – If you want to boost your vegetable intake, you can do so by adding some cauliflower rice to the creamy soup mixture. Just add, stir, and serve like you would. It is one of my favorite hidden veggies for a keto diet. Or add celery or carrots with the onions in the second step.
  • Thickness – If you want to create a thicker soup you can stir in a pinch of glucomannan or xanthan gum.

Toppings

Have fun with the toppings. Chopped dill pickles, diced green onion, green onions, extra cheese, diced tomatoes, shredded lettuce, or anything else that you’re craving are all perfect to add to your own bowl of soup.

  2. This sounds so good, I’m going to make it hopefully next week. My husband is keto but I am a GF carb-eater. What kind of grain/starch can I add to my half of the soup that would taste good? I was thinking maybe potatoes, maybe beans, even rice? But I’m not sure. I was even thinking to pour the soup on top of a toasted hamburger bun! Have you tried this w adding carbs and if you have, what tasted good in it? I love your recipes I love getting them in my inbox. If only I had time to make all of them, I would!

      1. This was very good. I made with ground pork, because I had puechased a lot on sale. But, one thing.   3. just a question as this sounds so good. Sure wish hubby would eat soup…..1/2 cup cream cheese….that’s a regular 8oz brick??

  4. This is one of my favorite soup recipes. I usually make it with ground turkey. I also like to chop up a pickle to add in. I know it sounds weird to have pickle in a soup, but it’s delicious (and a little more like a traditional cheeseburger).5 stars
