Ingredients
Onion - You can use white onions, red onions, or purple onions for this simple recipe.
Ground beef - You can also use ground turkey or even ground chicken if you don't want to add beef.
Chicken broth - This helps to keep the soup thin. You can also add beef broth or vegetable broth as well.
Heavy cream - Using cream helps to add richness to the soup base.
Cream cheese - This creates a creamy and decadent texture.
Shredded cheddar - Pick your favorite type of shredded cheese, and add. We normally use cheddar cheese or a colby jack blend.
Crumbled bacon - You can cook the bacon and add or buy it already made at the store. Just make sure to purchase bacon crumbles that are 100% bacon with added fillers.
Salt - For flavor. The salt will enhance all the other flavors.
Black Pepper - For taste. You can add as much or as little as you like.

Variations
Change the type of meat - You can add browned beef or even browned turkey to this simple low carb cheeseburger soup.
Add other flavors - Adding garlic powder, onion powder, red pepper flakes, or even some cayenne pepper can easily change the flavor of this simple keto soup recipe.
Add cauliflower rice - If you want to boost your vegetable intake, you can do so by adding some cauliflower rice to the creamy soup mixture. Just add, stir, and serve like you would. It is one of my favorite hidden veggies for a keto diet.
Thickness - If you want to create a thicker soup you can stir in a pinch of glucomannan or xanthan gum.
Have fun with the toppings - This low carb cheeseburger soup recipe can easily turn into a keto bacon cheeseburger soup recipe or more with the type of toppings that you use.
Chopped dill pickles, diced green onion, extra cheese, diced tomatoes, shredded lettuce, or anything else that you're craving are all perfect to add to your own bowl of soup.
Common Questions
What can I add instead of cream cheese to this low-carb cheeseburger soup?
If you want a cheesy soup or a creamy cheese soup base, adding sour cream can be another great option. This does change the original keto cheeseburger soup recipe and flavor quite a bit, but it will still give you an amazing soup that is full of flavor.
How do I store leftovers of this easy keto cheeseburger soup?
The best way to enjoy this low carb recipe again the next day is to store leftovers in an airtight container and keep them in the fridge. Be sure to let the soup cool down all the way, and then eat any leftovers within 2-3 days.
To reheat the leftover soup, add a portion to the stovetop in a small pan and heat or medium-low heat, or use the microwave for a quick reheat. Don't forget to add the toppings once the soup is hot!
Can I freeze delicious soup recipes like this keto soup?
I normally don't recommend freezing cream soups because of the creme cheese base. Dairy products don't tend to freeze the best, so it's normally suggested to enjoy decadent cream based soup while they are fresh.
However, this particular soup tends to freeze really well! I think the ratio of dairy to broth is the reason this can be frozen. Just thaw, heat, and stir. It might have a slightly different texture but I've frozen it many times and no one in my family minds.
