These easy BBQ Chicken Kebab Rolls are the fun dinner my kids (and yours) will love. They’re not only low carb, but these viral lazy kebab rolls take just minutes to make. Everyone in my family couldn’t stop eating them.

It’s just so much fun to eat food off a stick, and these chicken shish kebab rolls are no exception. They’re simple to prep and a great option for a quick and easy weeknight dinner.
You can eat them just like they are, or pair them with a dipping sauce of your choice. They’re also easy to customize with different flavors.
This Carrot and Cucumber Salad or Keto Broccoli Casserole would be great side dish pairings.

Ingredients
- Low carb tortillas – Buy your favorite brand, but bigger ones work better for making rolls.
- Ground chicken – I wanted to use a mild-flavored meat, but any ground meat will work.
- Cheddar cheese – I buy pre-shredded to save on time.
- Seasonings – I use the combo of smoked paprika, garlic powder, onion powder, kosher salt, and black pepper to flavor the meat. You can swap in a barbecue rub if you prefer.
- BBQ sauce – Pick your favorite flavor and brand.
- Mayonnaise – To add creaminess to the sauce.

How to Make BBQ Chicken Kebab Rolls
Preheat the oven to 475 degrees.

Step One: Add the chicken, seasonings, and cheese to a large bowl. Mix until everything is combined.

Step Two: Divide the meat mixture between the tortillas.

Step Three: Be sure that you spread the meat to cover the whole tortilla. Leave about an inch on the sides since you’re trimming it off.

Step Four: Roll it tightly.

Step Five: Cut into 1.5-inch slices. Discard the pieces without meat.

Step Six: Roll onto the skewers. It works best to put the ends in towards the next roll.

Step Seven: Put in the oven and bake for 15 minutes, flipping halfway through.

Step Eight: Stir the BBQ sauce and mayonnaise. Serve as a dip.
Top Tip💡
If you are using wooden skewers, soak them in water for 15 minutes beforehand. This helps them not catch on fire in the oven. For this recipe, metal skewers are really the best option.
Variations
- Italian – Mix some Zesty Italian Seasoning into the ground meat of your choice (ground sausage and ground turkey are a good combo), swap in mozzarella cheese, and serve with marinara sauce after baking.
- Mexican – Use ground beef or ground turkey, this Chicken Taco Seasoning, and cheddar cheese. Dip in a combination of sour cream and salsa.
- Indian – Mix garam masala or another combination of Indian spices into ground chicken, add some small cubes of paneer cheese, and bake. You can dip into mint chutney.
- Cajun – Add my Blackened Seasoning to ground chicken or turkey, add a mild cheese (like mozzarella), and bake. You can make a dip using mayo, sour cream, and a little more Cajun seasoning.

Storage
If you’re lucky enough to have leftovers, let them cool to room temperature and then store them in the fridge.
You can reheat slowly in the oven or in the microwave. The oven keeps them crispier, but the microwave works too.

Common Questions
Yes, you can prep them a few hours ahead of time. Just keep them on the baking sheet and cover with plastic wrap until you are ready to bake.

Ingredients
- 3 large low carb tortillas
- 1 lb ground chicken
- 1 cup shredded cheddar cheese
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/8 tsp black pepper
Creamy BBQ Sauce (optional)
- 1/4 cup BBQ sauce
- 2 tbsp mayo
Instructions
- Preheat oven to 475.
- Combine ground chicken, cheese, and seasonings.
- Divide the meat mixture between the tortillas.
- Spread the meat thinly, covering the entire tortilla. You can stop an inch from the end on two sides because they will be trimmed off.
- Roll up tightly.
- Cut into 1.5-inch slices. Discard the ends without meat.
- Put the rolls onto the skewers.
- Bake for 15 minutes, flipping halfway through, or until golden brown and the filling reaches 160 on a meat thermometer.
- Stir together the BBQ sauce and mayo. Serve with the creamy BBQ sauce to dip.
