Keto Snowball Cookies are melt-in-your-mouth delicious. With just three net carbs per cookie, they are perfect for your holiday cookie tray. I make these keto Christmas cookies every single year. They are the perfect tradition and a classic favorite cookie that the whole family loves. And I must say – sugar-free snowball cookies look great on Christmas cookie platters. 

If you’re searching for the perfect holiday cookie, add making these together to your family traditions. They are similar to classic Russian Tea Cakes or Mexican Wedding Cookies, but work for a low carb diet. The only thing I’m going to warn you about is that these keto cookies are addictive, so you may want to make a double batch.

Ingredients

  • Salted butter – This needs to be cold and cut into pieces.
  • Almond flour – One of the main flours needed to make the cookie dough. 
  • Coconut flour – Using coconut flour helps keep these gluten free snowball cookies. 
  • Joy Filled Eats Sweetener – This is my go-to sweetener, but if you need a different great option, the printable recipe card below has more keto sweeteners and choices. 
  • Gelatin – Helps achieve the right dough consistency. 
  • Vanilla – Adds flavor. 
  • Walnuts or pecans – Give these white flaky cookies a nice crunch. 
  • Powdered sweetener – Using a powdered sugar sweetener, such as powdered erythritol or powdered monk fruit sweetener, coats the cookies for that perfect snowball look. Make sure to use a 1:1 sweetener.

How to Make Keto Snowball Cookies

Preheat the oven to 350 degrees. Add parchment paper to a large cookie sheet.

Step One: Mix the almond flour, butter, coconut flour, granular sweetener, gelatin, and vanilla in a food processor.

Step Two: Pulse until you see wet crumbs forming. Add the nuts and pulse until they are chopped.

Step Three: Divide the dough into 16 pieces. Add the powdered sweetener to a small bowl and then roll each piece of dough into a ball. Roll the ball in the powdered sweetener. Place on the prepared cookie sheet. Repeat for all dough balls.

Step Four: Put the pan in the oven and bake for 15-17 minutes or until the cookies are firm to the touch. Let the cookies cool for 10 minutes, then roll in the powdered sweetener for a second time. 

Top Tip💡

​Use a small cookie scoop to make uniform-sized cookies. That way, you keep the portion the same, which is important for keto dieters when counting carbs. 

Substitutions

  • Extracts – If you don’t want to use vanilla extract, almond extract, or even peppermint extract could be used instead. 
  • Flour – While I haven’t tried using other flours, pecan flour or walnut flour should work as well. Traditional flour could also be used, but it would make them no longer gluten-free and would also change the carb count. 

Variations

  • Sugar substitutes – You can use other sweeteners, such as coconut sugar or monk fruit. If you have a great product that you like, use it in this gluten-free recipe and enjoy.

Equipment

To make these delicious cookies, you’ll need mixing bowls, a food processor, a baking sheet, and parchment paper, as well as a smaller bowl to hold the powdered sweetener.

Storage

Once these low carb snowball cookies are baked and cooled, store them in an airtight container and keep them at room temperature for a day or two. In the fridge, they should stay fresh for a week without issue.

To store snowballs longer, add them to a freezer-safe bag and seal it tightly.

Common Questions

Do these taste like classic snowball cookies?

I think that they do! They have the same mouthfeel and that buttery crumb texture that perfectly coats your mouth. The flavor and look are there, which is why they’re on repeat in my house.

What if I only have unsalted butter?

You can still use unsalted butter in this recipe, but I would add a pinch of salt to the dry ingredients list.

What if I don’t have a food processor?

Do your best using a hand mixer and large bowl. Also, buy the nuts prechopped (and chop some more) so they don’t overpower the rest of the dough’s texture. A food processor is best for this recipe, but if you don’t have one, you can use a hand mixer instead.

  • Combine the butter, almond flour, coconut flour, granular sweetener, gelatin, and vanilla in a food processor. Pulse until wet crumbs form. Add the walnuts. Pulse until they are chopped. The dough will come together into a ball as the nuts are chopped.
  • Divide the dough into 16 pieces. Put the powdered sweetener in a shallow bowl. Roll each piece of dough into a ball. Roll in the sweetener. Put on the prepared baking sheet. Repeat.
  • Bake for 15-17 minutes or until firm to the touch. Cool for 10 minutes. Roll in sweetener a second time.

Notes on Sweeteners: 
I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.
To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for. 
 
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
 
Substitutions will work in most recipes. They may not work in candies, such as caramel.

  2. These cookies are very good! The recipe says 3 net carbs but nutritional values say 3 carbs and 2 fiber, which would be 1 net carb right? Or is the carb amount shown already net?5 stars
