Frozen Hot Chocolate. It doesn’t make much sense until you taste it. Then you realize how it is possible to capture the flavor of a hot chocolate in a frozen beverage.
I was blessed a few weeks ago to go to Serendipity 3 in New York City with my Great Aunt June and my daughter whom has June as her middle name in her honor. It was a lovely afternoon and I can finally cross visiting Serendipity and having one of their famous Frozen Hot Chocolates off my bucket list.
Unfortunately, about an hour after sharing one with my daughter I had an awful headache. I assume it was from the sugar. I became determined to make my own version at home that was sugar free.
Most of my recipes come from my need to take a food I love and make it Trim Healthy Mama friendly. Sometimes it is something I’ve eaten dozens of times and other times it’s something I’ve only had once but it was amazing enough to stick with me.

3 tbsp heavy cream
1 cup almond milk
3 tbsp dark cocoa powder
1/2 tsp vanilla
pinch of xanthan gum, optional (helps stop the drink from separating)
1 tbsp coconut oil
14 ice cubes
Combine all the ingredients in a blender and blend until smooth. Garnish with whipped cream, cocoa powder, and/or chocolate shavings.
This makes one huge or two regular servings.
