A delicious FOUR ingredient white chocolate blondie? Seriously? Yes! I even surprised myself with this recipe. I had a big bag of raw cacao butter that was just sitting in the pantry and staring at me. I love to use it in peppermint white hot chocolate in the winter but it's July. I'm not really feeling that hot chocolate craving at the moment.

But a white chocolate blondie? I'll eat one of those any time of the year.
My raw cacao butter comes in oddly sized lumps. They definitely aren't aren't the easiest thing to measure for recipes. So I finely chopped my raw cacao butter and then measured it. I just kept going until I ended up with 1 cup of finely chopped pieces. Add those back to the food processor with the other ingredients, pulse until smooth, and pour into the baking pan. Super easy.
Raw cacao butter is a bit pricey. BUT if you look at the price of quality sugar-free chocolate it is comparable, if not cheaper.

If you look closely at the batter you can see the finely chopped cacao butter. As the blondies cook it melts and soaks into the almond flour the way chocolate does in brownies. It helps give these white chocolate blondies a smooth texture and rich flavor.

What else can you make with raw cacao butter once you bite the bullet and buy some?

I cut my white chocolate blondies into 16 small pieces but as I was calculating the nutrition I realize I didn't have to. Even with 9 big pieces these only have 2 carbs and under 200 calories. Raw cacao butter really is a superfood!

Ingredients
- 1 cup almond flour
- 1 cup raw cacao butter (5 oz)
- 3 egg whites
- ⅓ cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
Instructions
- Preheat the oven to 350. Spray an 8 x 8 baking dish with cooking spray.
- Add the ingredients to a food processor. Pulse until smooth. Pour into the prepared baking dish.
- Bake for 35-40 min or until golden brown and firm to the touch.
Notes
Sugar-Free White Chocolate - I developed this recipe before sugar-free white chocolate was readily available. If you want to use that in place of the raw cacao only use half the amount of sweetener listed.
Notes on Sweeteners:
I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.
To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for.
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
Substitutions will work in most recipes. They may not work in candies, such as caramel.

I wanted to like these. I really did. I followed the recipe to the t with the authors’ sweetener blend. They were crumbly yet greasy, though the flavor was ok.

I used "Sweet Perfection" as my sweetener. Ingredients: 99.5% chicory root with a bit of organic stevia and monk fruit. This substitution did NOT work out well. The blondies had almost no sweetness and virtually oozed grease when I chewed them. Yes, I did let them cool completely. Just a warning against substituting this particular "sweetener," which was not sweet at all. Next time I'll stick to the recipe.

Please don't leave a 1 star rating when you substitute an important ingredient. If you commented before you made it I would've said I didn't think that sweetener would work.

Sorry. In the end I used that batch as a crust and topped it with some lemon-flavored cream cheese frosting with blueberries and a sprinkle of toasted almonds. Yummy. Probably I should look up a recipe for the ingredients I have on hand instead of substituting. I'm not giving up on these blondies. Will try again when I have some Gentle Sweet.

These look scrumptious. Do you have an idea of how much the 1 one cup of raw cacao butter would weigh, as in grams or ounces? (it's difficult for me to chop up hard stuff fine, so I thought maybe I could weigh it out).

This looks delish! But I have a question since I'm new to THM- your JFE version of Gentle Sweet says to whirl it in the food processor to make it powdered like Gentle Sweet or just mix it by hand for baking. Since these blondies are baked, there's no need to powder it even though powdered sweeteners don't measure the same as granulated sweeteners? In other words, do I use 1/3 cup powdered or granulated JFE sweetener & if it's granulated, should I use less than 1/3 cup? Thanks!

Mine didn't turn out. Is there supposed to be any baking soda/powder in the recipe? Mine were flat and burnt on the edges from the fat swimming all through there.

No baking soda or powder. They should re-absorb the fat as they cool. That's what makes them fudgy. Did you switch out any ingredients?

Which sweetener so would u recommend tThinking swerve or pyre. I use stevia has erythinol and stevia glycosides in the ingredients. I read stevia not good for hannahs yummy brownie. I need to buy kosher product an not one thaT spikes blood sugar.
