I love this simple high protein cookie recipe. It’s perfect for my sweet tooth fix, while providing protein. When I’m trying to increase my protein intake, this single serving protein cookie recipe is my go-to treat. 

I love that you can make this delightful treat and not even know that it has added protein powder in it. It’s a healthy protein cookie that truly feels guilt free!

Ingredients

  • Almond flour – This is one of the main ingredients needed to make the protein cookie dough. 
  • Protein powder – You can use any protein powder brand for this recipe. 
  • Pecans – You can use any nuts of your choice
  • Salted butter – This needs to be very soft to use. 
  • Joy Filled Eats Sweetener – This is my go-to sweetener for all my baking needs. 
  • Egg – Binds all the ingredients together. 
  • Vanilla extract – For flavor.

Preheat the oven to 350 degrees. Add parchment paper to a baking sheet.

Step One: Stir all the ingredients together in a small bowl. It should mix easily if your butter is soft.

Step Two: Form into a cookie dough ball and place on the cookie sheet.

Step Three: Put the pan in the oven and bake for 8-12 minutes or until the edges are lightly browned.

Top Tip💡

You must use very soft butter for the ingredients to mix easily.

Substitutions

  • Protein powder – You can try chocolate protein powder, vanilla protein powder, or any type of protein powder that you want. If you use a sweetened protein powder reduce or omit the added sweetener.

Variations

  • Chocolate chips – Adding a few dark chocolate chips really makes this a sweet treat. 
  • Sweetener of choice – You can use any sweetener that you want for this recipe. Just account for the extra calories and carbs if you choose to use white sugar or brown sugar instead of a non-caloric sweetener.
  • Add extra protein – Topping with peanut butter or cashew butter is a simple way to boost the protein while still giving the best flavor.

Equipment

To make this single serve protein cookie recipe, you need parchment paper, a baking sheet, a small bowl, and a rubber spatula. That’s it! 

Storage

​Since this cookie recipe is a dessert for one, I highly doubt that you have leftovers. But just in case you like to savor your treats, you can store any leftovers in an airtight container or bag and save them for later. 

You can double or triple this cookie recipe and freeze cookies. This is a great way to meal prep for high protein desserts!

Common Questions

Can I add cocoa powder? 

You bet! You can easily turn these into chocolate cookies by adding a teaspoon of cocoa powder and reducing the almond flour by the same amount. Just add to the rest of the ingredients and mix in well. 

Will I taste the protein powder? 

I don’t, but it really does depend on the flavor and type of protein powder that you use. Some powders are stronger in flavor and taste, which means that you might get a taste of your protein powder when eating it. It all depends on if your taste buds can pick up the flavor. 

I do think that these cookies taste a lot better than eating a regular ol’ protein bar – and I’ll take eating a cookie over a bar any day for a protein boost! 

Can I add toppings?

You bet. I’m all about melting some white chocolate chips and drizzling them over the top. You can also top with sunflower butter or your chocolate chips of choice. The best part is that once you make this cookie, it’s 100% yours to enjoy how you want. 

Just be aware that adding any other ingredients or toppings will change the nutritional value of the dessert.

  • Stir together all the ingredients.
  • Form into a ball and put on the pan.
  • Bake for 8-12 minutes until lightly browned around the edges.

Notes

Nutrition: This makes one cookie. There are 2.8 NET carbs and 15.4 grams of protein per cookie.
Notes on Sweeteners: 
I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.
To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for. 
 
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
 
Substitutions will work in most recipes. They may not work in candies, such as caramel.

  1. This will be so good so I stop my addiction of quest cookies for breakfast. Would it be possible in the air fryer. Kind of too much of my big oven for one cookie.

    1. Yes, it should work in the air fryer. I haven’t tested it but I would try baking at 300 for 5-6 minutes and then checking it. Air fryers cook faster than ovens normally.

  4. Hey doll. You are one of my top 5 chefs. The recipes are easy and delicious. I am wondering about the 2 tsp of beaten egg…may I use egg white in lieu of? How many tsps are in a large egg? I like that I can make one cookie, but if I love them I’ll want to make 6 or more at a time. Thanks for your recipes!
