    Even though I eat low carb, that doesn't mean that I still don't have cravings for bread. But cutting out gluten and living keto means that typical bread recipes are a no-go for me. What I love about these low carb biscuits is that you'd never guess that they're keto-approved.

    My easy keto buttermilk biscuits are a delicious and easy-to-make breakfast that will have you coming back for more! It is a simple dish with few ingredients, but the flavor is incredible. You can enjoy these biscuits for brunch or any other time of day without feeling guilty about your diet.

    In fact, I've served these at dinner parties and my guests never even knew the difference. Of course, I had to tell them and I loved seeing their reactions. It's so great to know that I don't have to give up the flavor on my keto diet.

    This fluffy gluten-free buttermilk biscuits recipe is certain to be a hit the first time that you make them. They're great for breakfast, lunch, and dinner, or even a mid-afternoon snack. I really love the ease of these keto biscuits.

    Ingredients Needed

    As you can see, these homemade keto buttermilk biscuits are made with simple ingredients that you might already have in your pantry.

    • Almond Flour - Combined with coconut flour, the two flours create the texture of these biscuits. 
    • Coconut Flour - Adds a little bit of sweetness to the recipe. 
    • Buttermilk - Buttermilk keeps the biscuits moist while adding a rich flavor.
    • Egg - Used as the other ingredients needed to hold the flours together for baking. 
    • Butter - I use unsalted butter for this recipe. 
    • Baking Powder - Adds a bit of fluffiness to the texture. 
    • Salt - Just a pinch enhances the other flavors.
    • Mozzarella - Shredded mozzarella cheese is what you'll be adding.

    How To Make Low Carb Biscuits

    Once you gather up all the ingredients needed, it's time to get started making the biscuit dough! It's a simple recipe that has huge flavor! Just follow the simple instructions below.

    Step One: Preheat the oven. Line the baking sheet with parchment paper or spray with a nonstick spray. 

    Step Two: Add all the dry ingredients into a bowl, minus the mozzarella. Mix and then add in the cheese at the end. This is your biscuit batter.

    The mixture should be moist and stick together quite well after you stir.

    Step Three: Scoop 12 biscuits onto a baking sheet and bake for 25-30 minutes.

    Variations

    Cheese - You can change up the type of shredded cheese that you're using and that will easily change up the flavor. Using cheddar cheese to make keto cheddar biscuits is also delicious.

    Sour Cream - If you don't have any buttermilk in the house or don't care to use buttermilk for this recipe, you can use sour cream in its place. This will still give a creamy taste and texture and also add a bit of richness.

    Greek Yogurt - Greek yogurt is another simple ingredient that you can add to take place of the buttermilk in the recipe.

    Ghee - You could use ghee in place of the butter.

    Garlic Powder - Add some garlic to the dough for a boost of flavor. Using both cheddar and garlic makes these keto savory biscuits taste like the biscuits from Red Lobster.

    Herbs - Adding fresh herbs or dried herbs like rosemary, thyme, basil, or oregano are great variations to try for keto buttermilk biscuits.

    Common Questions

    How do you know biscuits are done baking in the oven?

    You're going to have to pay attention to the edges of the biscuits. Once they start to turn golden-brown that is your indicator that they're done and ready to be pulled from the oven.

    You can also check by cutting up one of the biscuits slightly as well. If the inside still looks like dough, you know that they need more time in the oven to bake.

    How do you serve golden brown keto cheese biscuits?

    These biscuits are more savory than sweet because of the added cheese. Pair these with any type of entree or meat and they'll easily complete the meal.

    There are times that we eat these biscuits as a quick meal as we're running out the door. They're hearty and delicious and the perfect size to grab and go.

    If I want something to pair with my salad, these are my go-to biscuits. I also think that these would be so good with a sausage gravy mixture as well.

    I've also used these to make a sandwich for the kids for school as well as a great way to cut some of the richness from my bacon during breakfast in the morning.

    Can you freeze this baked keto biscuit recipe?

    Absolutely. If you have too many biscuits leftover, just pop them in the freezer for later. They'll stay good for quite some time and it's an easy way to meal prep, too. The key is to store them in an airtight container.

    To unthaw biscuits, just take them out of the freeze and put them in the fridge. This will take a little bit for them to thaw but it'll be worth the wait.

    What toppings would you add to these made from scratch biscuits?

    Personally, I don't think that they need any toppings but if you wanted to add anything, butter is always a good choice! If you want to try jam, I would recommend raspberry or strawberry flavors.

    Topping with a bit of garlic butter would be quite the flavor sensation, too! I also think this almond flour biscuit recipe would taste really good with a thin layer of cream cheese spread right on top as well.

    Is buttermilk keto friendly?

    Large quantities of buttermilk should not be consumed on a keto diet. Buttermilk has 12 net carbs per cup. This recipe uses just ¼ cup of buttermilk divided by 12 biscuits. So each biscuit has only .25 carbs from the buttermilk. Such a negligible amount is fine on keto.

    How do you make buttermilk?

    If you don't have any buttermilk in your fridge, you can make some. All you need is 1 cup of milk combined with 1 T of either vinegar and lemon juice. The two mixed create buttermilk! Just let it sit for a few minutes to thicken.

    If you make more buttermilk than you need for this recipe, just store the excess in a jar with a lid and use it another time. If you want to make just enough for this recipe combine ¼ cup of milk with a scant teaspoon of vinegar or lemon juice.

    • 1.5 cups almond flour
    • 1 tablespoon coconut flour
    • ¼ cup buttermilk
    • 1 egg
    • 2 tablespoon butter
    • 1 teaspoon baking powder
    • ½ teaspoon salt
    • 1 cup shredded mozzarella

    • Combine all biscuit ingredients together (except the mozzarella). Mix until smooth, then gently fold in the mozzarella.

      I made these biscuits tonight. I set the oven at 350 and I looked at them in 20 minutes and they were already over cooked and they were really browned plus the cheese was burnt. I took them out right away and even drizzled butter over the tops of them. The biscuits were very dry. If I try them again, I will maybe cook at 300 for 10 or 15 minutes. I am thinking that 350 for 25-30 minutes for 12 biscuits is way to long. I even had them on the highest rack in the oven.

        Have you checked your oven temp recently? In general, baked goods with almond flour take a little longer to cook than white flour. I do recommend baking on the middle rack no matter what.

      I was just wondering why in the nutrition part of the recipe it says “one biscuit with gravy” did I miss something…..if there is gravy, please share ❤️❤️
