The flavor of these Keto Brownie Bites will have you grabbing just one more! They’re small enough to grab and pop in your mouth while packing a huge chocolate taste! These are perfect for a quick low carb dessert that everyone is going to love. This brownie dessert is low carb, keto friendly, gluten-free and sugar free!

Some people refer to these brownie bites as a mini-muffin, and honestly, I’m fine with that. Because that just means that you can totally eat this for dessert and breakfast as well.

Using the unsweetened chocolate gives this brownie recipe that dark coloring and the perfect hint of sweetness paired with the sugar free chocolate chips. I have a Caramel Pecan Sauce that I made that is crazy good and literally perfect for adding to the top of these brownie cupcakes. (See, I have all sorts of names for these tasty treats!)

Ingredients

Unsweetened chocolate – You can use regular sugar-free chocolate chips or dark chocolate for this recipe as well. If you choose to use sweetened chocolate cut back on the added sweetener a bit.

Butter – You’re going to want to make sure that it’s melted when used. 

Joy filled eats sweetener – The perfect sweetener for all your low carn and sugar-free baking needs.

Almond flour – Excellent flavor that pairs well with the chocolate. 

Coconut flour – Adds a hint of sweetness and coconut flavoring. 

Egg – The egg acts as the binding agent for all the ingredients. 

Vanilla – Adding vanilla extract is never a bad idea. 

Sugar free chocolate chips – I like to use milk chocolate but you can use any flavor. 

Caramel pecan sauce – This is an optional topping, but a delicious one!

How To Make Keto Brownie Bites

Step One: Preheat the oven to 350.

Step Two: Melt the chocolate and butter in a small saucepan or in the microwave in a small bowl. Let the mixture cool to room temperature.

Step Three: Stir in the remaining dry ingredients and wet ingredients. I just add them all at the same time.

Expert Tip: We cooled the unsweetened chocolate and butter to room temperature so that the chocolate chips won’t melt when added.

Step Four: Just stir until it’s all combined well. It may look a little oily from the melted butter but that is normal.

Step Five: Divide between foil-lined mini muffin tins.

Step Six: Bake for 12-15 minutes. Remove from the oven and let cool.

Step Seven: Top with keto caramel pecan sauce, if desired. The sauce will firm up on the brownies until it is the consistency of pecan pralines.

Variations & Toppings

Variations are great but just keep in mind that changes in this recipe do add changes to the overall carb count, calorie count, and nutritional information.

Chocolate chips – Change up the flavor of chocolate chips to change up the taste!

Nuts – If you want to add some crunch, go for it. Pecans, walnuts, cashews, and even peanuts are all delicious options and great for extra added protein and fiber. Nuts will also add a higher fat content and more calories, too.

Ice Cream – Top warm brownies with Keto Peanut Butter Ice CreamKeto Vanilla Ice Cream, or Keto Chocolate Ice Cream.

Ganache – Mix 1/4 cup piping hot heavy cream into 1/2 cup sugar-free chocolate chips. Stir until they melt and are smooth. Let rest for 10 minutes to thicken before using as a topping.

Peppermint – Add 1/2-1 tsp of mint extract to the batter.

Raspberry – Press one frozen raspberry down into the center of each keto brownie bite.

Common Questions

Do you need to grease the mini muffin pan before adding the brownie batter?

Absolutely. You can use some nonstick cooking spray to put inside the tin, or even find some mini liners to use instead. If you have a silicone baking pan, that’s also a great option to use but I still do spray that as well.

How do you know when brownies are done baking?

The toothpick test is the perfect way to tell. Insert a clean toothpick into the center of the brownie. If it comes out clean, the brownies are done! If there is some batter on the toothpick, give them a tad bit more time in the oven and then check again.

How do you store leftovers of this keto dessert?

You need to store these snacks in the fridge for the best results. The cool air will keep them fresh longer, up to 3 days. Just be sure that you have them in an airtight container with a lid.

If you want to freeze these for later, you can add them to a freezer-safe bag or container and store them. They should stay frozen without issues for up to three months.

Can you enjoy these brownie bites living a keto lifestyle?

You can! With low net carbs, you can eat one and not have to worry about falling off track. Just be sure that you indulge but don’t go overboard and you’ll be just fine! The great part about living keto is that you don’t have to give up your sweets and treats – you just have to watch your carbohydrates.

Notes on Sweeteners: 
I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.
To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for. 
 
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
 
Substitutions will work in most recipes. They may not work in candies, such as caramel.
