    Fresh Mozzarella is one of my favorite varieties of cheese. It has a subtle flavor and creamy texture and compliments so many other flavors. I've been craving pizza, and it is way too hot to turn on the oven in NJ in the summer. I've been playing around with ideas about grilling low carb pizza dough and knew that this grilled pizza dough recipe would go perfectly with fresh mozzarella.

    The chives from my garden and the tomatoes and arugula were from the farmer's market. I can't wait until my garden tomatoes are ripe!

    Ingredients Needed

    Dough Ingredients:

    • Shredded Mozzarella - Using mozzarella for the dough not only enhances the flavor but also gives you a delicious texture too.
    • Cream Cheese
    • Egg
    • Almond & Coconut Flour - You really need a combination of both almond and coconut flour to reach the ideal consistency.
    • Golden Flax - If you don't have or don't like flax, swap it for almond flour instead. Just make sure to use ground flax if you do use it.

    Topping Ingredients:

    • Fresh Mozzarella - The key to the most delicious pizza is for sure using fresh mozzarella. It's pretty hard to beat!
    • Cream Cheese
    • Roasted Garlic Powder - If you don't have any roasted garlic powder, regular works fine too.
    • Herbs
    • Baby Arugula - Adding some arugula will add a tasty peppery flavor, but it's also a powerhouse of nutrients. Protein, folate, potassium, vitamin K, iron, and so much more!
    • Tomato - Because tomatoes are naturally sweet, they really make the pizza extra good! It helps tie the flavors together.
    • Balsamic Vinegar - I can't get enough of the tangy flavor of adding some balsamic vinegar reduction to the pizza. It's heavenly!
    • Salt & Pepper
    • Roasted Garlic Powder

    How to Make Low Carb Grilled Pizza Dough

    The trick to grilling fathead dough is to start it out on a cookie sheet. It is too soft to place directly on the grill. Once it cooks a bit, then you can flip it right onto the grates.

    I start my pizza on a parchment-lined cookie sheet. Once the dough sets, I turn it over onto the grates and peel off the parchment.

    At this point, you can top it with cheese if you want it to melt. I wanted my toppings at room temperature for this grilled pizza.

    This grilled pizza dough recipe was so good my husband ate more than half it for dinner (that was about 12 oz of cheese in his belly). I had a few pieces and then had the rest for lunch the next day. It was just as good cold from the fridge. I plan on serving it as an appetizer at our next party. I got 12 generous pieces out of one grilled pizza. Perfect for an appetizer or side.

    Is It Okay To Use A Pizza Stone?

    Sure! It's not required, and you can get away with an old pizza pan, but a pizza stone is great. The grilled pizza dough will be nice and crispy, plus it will cook evenly too. Try it and see which you like best.

    Can I Add Different Toppings?

    Of course! Just like any other pizza recipe, you can totally make it your own. In the mood for sausage? Throw some on. Craving pepperoni? Why not include some on top. There really aren't any wrong answers for pizza. So if you are craving something different, consider adding: peppers, onions, sun-dried tomatoes, chicken, hamburger, or anything else you like!

    The biggest thing you need to think about is not putting too many toppings on. Otherwise, it's not going to cook evenly, and it will be very difficult to pick up a piece without toppings falling off.

    How Do You Save Leftover Pizza?

    Once you are done cooking the pizza, let it cool down all the way. Placing it on a wire rack will allow the air to flow underneath the crust to prevent it from getting too soggy or moist.

    After it's cooled, wrap it in a piece of plastic wrap or place it in a sealed container.

    How Do You Reheat Pizza

    There are many ways to reheat a pizza or a few slices. The easiest method is the microwave. Cover the pizza with a paper towel and heat it until it's hot.

    A super easy method is to place the pizza in your air fryer. Heat it at 370 for 4-5 minutes. Check it, and if it's hot, you can eat it. Don't heat it for too long, or it will burn.

    Another idea is to place the pizza on a pan and warm it in the oven. Warm at 350 degrees for 5-10 minutes or until it's hot.

    Ingredients

    Dough Ingredients:

    • 8 oz shredded mozzarella
    • 2 oz cream cheese
    • 1 egg room temperature
    • ⅓ cup almond flour
    • ⅓ cup coconut flour
    • ⅓ cup ground golden flax or additional almond flour

    Topping Ingredients:

    • 1 lb fresh mozzarella sliced into about 12 pieces
    • 2 oz cream cheese softened
    • 1 teaspoon roasted garlic powder or regular garlic powder
    • 1 tablespoon fresh herbs chopped (I used chives but you could also use basil, oregano, or thyme)
    • 1 big handful baby arugula about 2 oz
    • 1 large tomato sliced
    • ¼ cup balsamic vinegar reduced to 1 tablespoon - see instructions
    • ¼ teaspoon salt
    • ⅛ teaspoon pepper
    • ¼ teaspoon roasted or regular garlic powder

    Instructions

    Pizza Dough:

    • Preheat grill to medium-low.
    • Put mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave one minute. Stir. Microwave 30 seconds. Stir. At this point all the cheese should be melted. Microwave 30 more seconds until uniform and gloopy (it should look like cheese fondue at this point if it doesn’t keep microwaving in 30-second increments). Mix in the egg and baking mix. You will need to dump it onto wax paper and knead it by hand to thoroughly incorporate the ingredients or you can do this in a food processor with the dough blade.
    • Line an old cookie sheet (make sure it will fit on your grill) with parchment paper. Dump the dough onto the parchment. Press or roll into a large oval on the parchment paper using wet hands or a wet rolling pin.
    • Put the cookie sheet on the grates. Grill for about 5-10 minutes until the dough has firmed up. The heat of grills varies a lot so it’s best to keep peeking at it every few minutes. 
    • Once the dough has firmed up and the edges are golden remove the baking sheet from the grill. Wear oven mitts, it is very hot. Flip the dough upside down right on the grates and peel off the parchment. If you want your toppings hot put them on now. Grill for an additional 5 minutes until the dough is fully cooked.

    Pizza Toppings:

    • To reduce the balsamic vinegar simmer it in a small saucepan for 5-10 minutes until reduced by ¾.
    • Stir together the cream cheese and herbs. Spread over the grilled pizza crust. Top with baby arugula, then the tomatoes, then the fresh mozzarella. Drizzle the balsamic reduction over the top.

      This looks delicious! I am a little confused on part of the instructions. You start with a cookie sheet, top with parchment paper. Then you mention a pizza stone. So do we use a stone or cookie sheet? And when we flip the crust, it goes directly on the grill? Does the grill make the cookie sheet only good for a grill or does it clean up like normal?
      I have wanted to grill pizza for a long time but never had the nerve. Maybe this will be the year! 🙂

        I edited the instructions to clarify. You don't need a pizza stone. And yes, when you flip the dough can go right on the grill.
