I love having easy recipes like this on hand for sweet snacks. I really enjoy the chewy texture of these easy bars. Since they’re low in carbs and sugar, they’re a guilt-free dessert that treats my taste buds without knocking me off track. 

Adding the cream cheese keeps them moist and delicious, and the vanilla extract and almond flour round out the flavors in these gluten free cookie bars. They’re like golden-brown cookies meet fudgy brownies, and I’m here for all the tastes.

Ingredients

  • Salted butter – Make sure that it’s softened before using. 
  • Joy Filled Eats Sweetener – My go-to granulated sweetener for baking purposes. There are alternatives listed in the recipe card below. 
  • Cream cheese – Adds richness and a moist texture. Cream cheese mixes in easily if it is room temperature.
  • Egg – The binding agent for the dry ingredients. 
  • ​Vanilla extract – For flavor. 
  • Almond flour – The basis for making the dessert bars. Ground almond meal will also work.
  • Baking soda – Adds texture. 
  • Salt – Just a pinch enhances the other flavors.
  • Sugar-free chocolate chips – Adds chocolate flavor and a burst of sweetness in each bite.

How to Make Almond Flour Cookie Bars

Preheat the oven to 350 degrees. Add parchment paper to an 8X8 baking pan.

Step One: Cream the softened butter and sweetener in a large mixing bowl with an electric mixer.

Step Two: ​Mix in the remaining wet ingredients. Don’t worry if there are some lumps.

Step Three: Add the dry ingredients and just until combined.

Step Four: Mix in the chocolate chips. The batter will be thick.

Step Five: Spread the batter in the baking pan. ​Put the pan in the oven and bake for 14-16 minutes or until golden brown.

Step Six: Cool before slicing and serving.

Top Tip💡

You can check the doneness of the bars by inserting a clean toothpick into the center once the timer goes off. If the toothpick comes out clean, the cookie bars are done and ready to be removed from the oven. 

    Variations

    • Leave out the chocolate chips – If you want these to be more like sugar cookie bars and less like chocolate chip cookies, just leave them out. You can also swap in chopped nuts.
    • Sugar – If you want to use regular sugar, brown sugar, or coconut sugar, you can swap it in for my sweetener, but that will change the calorie and carb counts. 
    • Chocolate chips – Any type of chocolate chips will work for this recipe. You can use sugar-free white chocolate, dark chocolate chips, mini chocolate chips, or a combination of all of them. Have fun with the flavors and see which ones you prefer. A little change does alter the flavor, but it can be in a good way!
    • Almond extract – If you’re not a fan of vanilla extract, you can swap it out for almond extract.

    Equipment

    All you need to make these cookie bars is a mixer, a mixing bowl, and a prepared pan. Measuring cups and a rubber spatula are also good for stirring and planning. 

    Storage

    Once these baked bars are cooled, store leftovers in an airtight container and keep them in the fridge. You can eat them chilled right from the refrigerator or warm them slightly for a few seconds in the microwave. You can also slice and freeze these bars. Just wrap in plastic wrap, place into a storage bag, and keep in the freezer.

    Common Questions

    Why are my cookie bars dry?

    If the gluten free cookie bars are dry or crumbly, you may have overmixed the batter or baked them too long. Be sure you mix the ingredients until they are just combined, not longer. Also, pay attention to the baking time. The coloring on top is key, as well as using the toothpick test.

    Can I add a topping?

    You can always add toppings! Drizzling some sugar-free melted chocolate chips on top is fun, or sprinkling on cinnamon. You can add anything that you want once they’re cooled. As I always mention, any additions or alterations change the nutrition facts, so just keep that in mind as you go.

    • Preheat oven to 350. Line an 8×8 baking pan with parchment paper.
    • Cream together the butter and sweetener in a large bowl.
    • Mix in the cream cheese, egg, and vanilla.
    • Add the dry ingredients just until incorporated.
    • Stir in the chocolate chips. Spread in the prepared pan.
    • Bake for 14-16 minutes or until golden brown. Cool completely.

    Notes

    Nutrition: The nutrition facts are for 1 cookie bar. There are 1.5 NET carbs per serving.
    To Store: Keep the cookie bars in an airtight container in the fridge. They will last for 1-2 weeks.  
    To Freeze: Put the cookie bars in a freezer bag or container, and they will keep for 2-3 months. 
    Notes on Sweeteners: 
    I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.
    To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for. 
     
    To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
     
    Substitutions will work in most recipes. They may not work in candies, such as caramel.
