We eat a lot of spaghetti squash in our house because it's so great for a low carb diet. I love how it can be eaten as a noodle replacement or easily on its own.
I've used spaghetti squash with casseroles and even as a way to make a low carb spaghetti dish easily, too. Cooking spaghetti squash is great during the fall months, especially if you've been growing fall vegetables in your garden.

- Spaghetti Squash - If you can grow your own in your garden, do so! They're actually really easy to grow and are great for storing in your fridge until you're ready to cook them up. They'll last quite some time if you don't cut into them.

How To Make Squash In The Air Fryer
You're able to realize why using your air fryer is awesome. Your hard-as-a-rock squash is going to be fork tender in no time at all.
Step One: Clean the other skin (flesh) of the squash and slice it into sections. Scoop out any seeds and toss them.
Step Two: Add the sectioned pieces of squash to your air fryer basket and cook for 10 minutes at 400 degrees.
The squash will be tender and ready to enjoy any way that you want to eat it! With a cook time this fast, you'll be eating and ready in no time.

Since this recipe is just one ingredient, let's focus on all the fun toppings that you can eat with spaghetti squash.
Sweet - Once you cook this squash recipe, you can top it with cinnamon and a brown sugar sweetener (plus butter!) so that it creates a delicious and sweet flavor in a unique delicious side dish. I like this variation as a side to Air Fryer Cornish Hen.
Savory - If you don't want to make it sweet, you can add some spaghetti sauce or marinara sauce and Parmesan cheese to the top as well. Don't forget to add a bit of fresh parsley and sprinkle some garlic powder on top, too. Tomato sauce on this is our favorite way to enjoy it. This Tomato and Mascarpone Sauce is excellent. I also think that this is great with just a bit of olive oil or butter and salt and pepper. Refined coconut oil is another healthy option.
Creamy - My kids love topping with alfredo sauce, shredded mozzarella, and some cooked chicken. You can even eat it right out of the skin.

Common Questions
Is there a trick to cutting spaghetti squash?
Cutting the squash into sections can be a bit tough. You need to make sure that you're careful so that you don't have it roll on you and cut yourself.
One way to make the cutting process easier is that you can use a fork and put a bunch of holes into the skin. This will pierce it all over and you can then pop it into the microwave for a minute or two to "steam" it a bit. This should soften it enough to help you cut it easier. You do want to make sure that you use a sharp knife as well.
You can leave the stem on or remove it, it won't make a difference when cooking.
Can you overcook spaghetti squash?
Absolutely. If you overcook this recipe, it will turn out to be a bit mushy and not as stringy. It should still taste great but it just won't have the texture that you're looking for. You want the strands to hold their own when you chew them!
Can you freeze spaghetti squash?
Yes, freezing cooked squash is a great way to meal prep. Just make sure that you let it cool down all the way before adding it to freezer-safe bags.
If you freeze the squash while it's still warm, it will trap a lot of moisture in the bag which will cause ice crystals on the inside of the freezer bag.
How do you remove seeds from winter squash?
Taking out the seeds is super simple! Once you get the squash cut into pieces, you just need to use a scoop or spoon to take out the seeds. Scrape around on the inside and remove all the seeds.
Is air fryer spaghetti squash supposed to be a little crunchy?
Yes, the texture of the squash noodles will have a little bit of crunch to them. This doesn't mean that they're raw or need to be cooked longer so don't worry about that. It's just the way that the noodles are once they're cooked. I like my squash al dente. I've found that instant pot spaghetti squash gets mushy which is why I started air frying it instead.
How long does spaghetti squash last in the fridge?
As long as you store it in an airtight container, it should be good for 5-7 days. You may notice some liquid in the container and this is just moisture that is coming from the spaghetti squash as it sits and cools.

You can bake spaghetti squash. It takes about 30-40 minutes at 400. You pierce it with a fork to check if it's tender.
