Ingredients
- Lean ground beef – Lean beef has fewer calories and less fat.
- Onion – I like to use a sweet onion for this recipe, but any option will work.
- Bell peppers – Green bell peppers work well, but adding a red or yellow bell pepper is fun for a pop of color.
- Garlic cloves – Minced garlic is great!
- Diced tomatoes – I used canned tomatoes to save on time.
- Beef stock – You could also use vegetable broth.
- Chili powder – This could be optional if you don’t want to add heat.
- Cayenne pepper – Again, could be optional.
- Italian seasoning – For flavor.
- Ground black pepper – For flavor.
- Sea salt – For flavor.

How to Make Keto Chili
Step One: Add the beef to the skillet and brown it. Drain the grease.
Step Two: Put all the ingredients into the slow cooker and stir.
Step Three: Cook on low for 6-7 hours or on high for 3-4 hours.
Alternatively, you can cook this in a covered pot on the stovetop.

Substitutions
Tomato sauce – If you want to cut down on some of the diced tomatoes, you can add tomato sauce instead.
Turkey or chicken – Instead of using ground beef, ground turkey or chicken can be used.
Variations
Tomato products– You can use fresh tomatoes, canned tomatoes, tomato paste, or anything else that you’re craving.
Kidney beans – Although adding this will change the total carbs and carb count, it can be a good addition to make this into a bean chili recipe.

Storage
Once you make this beef chili recipe, you’ll likely have leftovers because it makes a pretty big serving. Let the chili cool to room temperature, and then store it in an airtight container in the fridge. You can store it for three days and reheat it thoroughly before eating it again.
You can also freeze this easy keto chili recipe. I like to add leftover chili to freezer containers or plastic bags and store them that way. If you store the leftovers in plastic bags, smooth them out and lay them flat so that they flatten and the frozen chili doesn’t take up much freezer space.

Keto Chili Recipe – Slow Cooker No Bean Chili
Ingredients
- 2 pounds lean ground beef
- 1 small onion chopped
- 3 bell peppers seeded, diced
- 5 cloves garlic minced
- 2 (15 oz) cans diced tomatoes
- 1 1/2 cups beef stock
- 2 Tablespoons chili powder
- 1/4 teaspoon cayenne pepper or to taste
- 1/4 teaspoon Italian seasoning
- 6-8 turns freshly ground black pepper
- 1/2 teaspoon sea salt
Instructions
- Brown the meat in a skillet.
- Add everything to the slow cooker and stir together.
- Cook on Low for 6-7 hours or High 3-4 hours.

I followed the recipe exactly but mine turned out more watery. Any tips on what I could be doing wrong?
You could add a thickener like xanthan gum or reduce the amount of stock. There are always variables such as how much liquid the beef releases, how much liquid is in the canned tomatoes, etc.
I agree with you. Just looking at the recipe it is clear that there will be a lot of liquid. I’d skip the stock and just use a teaspoon of beef base (bouillon).
Can you use some beans and keep it an S meal?

Anyone know how many net carbs a serving? I am new to this keto diet.

Second time around on this recipe. First time no cayenne (wife does not like) – this time cooked up some bacon (6 slices) cut about 1″ long.
What can I substitute for beef stock? I really want to avoid a trip to the store lol

Yup! I’d just look up timing and settings for an instant pot chili and copy it.

Yup! You can just simmer on low for a couple hours instead.
This chili would definitely solve the bean or no bean debate. Either way, it looks delicious and super easy using the crockpot! I’m a coffee first girl but agree that I need leftovers built into my weekly dinner plans!
I am a sucker for chili when it cools down, and I’ve been trying to cut a lot of carbs out of my diet. This looks like a perfect solution – what do you think I could add to get that bean texture, though? Black soybeans?
If you aren’t keto you could just add some black beans. They really don’t have that many net carbs because they have so much fiber.
I have made a keto chili recipe that used diced pork for the bean texture. I plan on adding that to this recipe.

Yes, this should work to prep ahead of time.

Sorry for the delay! That was an error in the comment. You should brown the meat first. But it would work either way.

You can either just let the slow cooker do its thing or brown the meat first. If you choose not to brown the meat the chili might have more liquid. If you prefer a drier chili brown and drain the meat first.
