Making a keto mug cake is literally one of my favorite treats. Knowing that I don't have to turn on the oven and can rely on the microwave to make a moist and delicious cake makes me super happy as a mom. We all know that sugar cravings can be hard to ignore, and it's frustrating to think that all our healthy eating and hard work goes out the door when we want to eat desserts.
But this is why I'm obsessed over the net carbs in this cake and the ease of making it. It keeps me on my low carb diet while still being gluten-free. If I'm dreaming, don't wake me.

Butter - Make sure that the butter is very soft to be able to be used correctly in this recipe.
Almond flour - Adding the almond flour creates a nutty flavor that everyone will love.
Egg - The egg is the perfect binding agent that gives a boost of protein.
Sour cream - To keep the mug cake moist, adding a dollop of sour cream is a great idea.

Baking powder - A pinch of baking powder helps make the cake fluffy.
Vanilla - Vanilla extract is always a great flavor enhancer.
Salt - Just a pinch goes a long way.

Step One: Add all the ingredients together into a microwave-safe mug and stir until the cake batter is smooth.
Step Two: Put in the microwave for a cooking time of 1 minute and 30 seconds.
Variations
Cocoa powder - If you want to add a dark color or a chocolate flavor, a spoonful of cocoa powder will do the trick.
Coconut oil - In place of the butter, you can add a tablespoon or so of coconut oil.
Nuts - Adding crushed pecans and walnuts on top make the perfect crunch.
Chocolate chips - It will change the carbs, but adding some sugar free mini chocolate chips sounds great.
Whipped cream - Don't forget that you can add sugar free whipped cream right on top! (or even a scoop of vanilla ice cream, too).

Sure! The almond flour mug cake is about the size of a large cupcake so it will take about the same time to bake. About 25 minutes at 350.
How hard is it to change up the flavor of mug cake?
Not hard at all. You can easily make a keto chocolate mug cake just by adding in some cocoa powder. If you're wanting a lemon flavor, you can add some lemon zest to the mug, too. Simple additions in a cake this size make a flavorful impact.
Are microwave mug cakes safe?
You bet! Just follow the directions and make sure that you're using a microwave-safe mug. You're going through the heating process to be sure that you're getting the flour to the optimal temperature while also cooking the egg all the way through, too.
Can you reheat a mug cake?
You can but you need to be careful that you don't reheat too much that you're going to overcook it. To reheat and soften the mug cake, all you need is about 10 seconds of time to warm it back up.
Do mug cakes need to be refrigerated?
If you have mug cake leftover, you can actually store it in the fridge covered or leave it out at room temperature for up to 1 day. If you do store the cake in the fridge, putting a lid or a cover over the top will help it from getting too chilled and then drying out.
To warm up and help moisten, heat up in the microwave for about 10 seconds.
